First, prepare the main ingredient, Korean radish. Peel the outer skin of the radish thoroughly, then slice it thinly and flatly into pieces about 0.5 cm thick. This ‘nabak-style’ cut allows the radish to meld beautifully with the broth and makes it easy to eat. (Tip: Avoid slicing the radish too thinly, as it can easily fall apart. Maintain a moderate thickness.)

Next, prepare the apples. Wash the apples clean, remove the core, and slice them thinly and flatly to a similar size as the radish pieces (about 0.5 cm thick). Apple varieties like Fuji or Hongok, which are crisp and sweet, work well here. (Tip: To prevent the apples from browning, slice them immediately after you’ve finished slicing the radish.)

Green onions are key to adding a fragrant aroma to the water kimchi. Wash the green onions and trim them into long pieces, about 5-7 cm in length, separating the white and green parts. Lay these long-cut green onions at the bottom of your kimchi container. This helps keep the ingredients neat and organized when you serve the kimchi later.

Now, let’s mix the ingredients. Place the sliced radish and apples attractively over the bed of green onions. Sprinkle 2-3 tablespoons of salt evenly over the ingredients. Gently mix everything with your hands, being careful not to mash the radish and apples. Ensure the salt is distributed evenly. This process draws out moisture from the vegetables, making the water kimchi more refreshing and flavorful.

Let the salted ingredients sit for about 10 minutes to lightly pickle. Once the radish appears slightly translucent and softened, carefully transfer the ingredients to your kimchi container without disturbing them too much. Then, pour in 1.5-2 liters of water. You can adjust the amount of water to your preference. For this recipe, garlic is intentionally omitted to fully highlight the refreshing and sweet natural flavor of the apples. This results in a clean-tasting water kimchi where the apple’s essence shines through. For the best flavor, let it chill and ferment in the refrigerator for at least a day before serving.
