One-Pan Chicken Breast Pasta Ingredients

  • 1 Chicken breast
  • 100g Pasta (spaghetti, fettuccine, or your favorite)
  • 1/2 Onion
  • 300ml Milk
  • 200ml Water
  • 1 tsp Salt
  • Pinch of black pepper
  • 1 Tbsp Minced garlic
  • Olive oil (for sautéing)
  • 1 Tbsp Fine chili powder
  • 1 Tbsp Fajita seasoning
  • Pinch of dried parsley

Cooking Instructions

Heat 2 tablespoons of olive oil in a large skillet or pan over medium-low heat. Add the thinly sliced half onion and sauté until translucent and softened, about 5-7 minutes. This process will release the onion’s natural sweetness into the dish.

Add another tablespoon of olive oil to the pan (or push the onions to one side). Add 1 tablespoon of minced garlic and sauté until fragrant, about 30 seconds. Cut the chicken breast into bite-sized pieces and add them to the pan. Cook until the chicken is no longer pink on the outside. Once the chicken is almost cooked through, stir in 1 tablespoon of fine chili powder and 1 tablespoon of fajita seasoning. Cook for another minute, stirring to coat the chicken evenly with the spices. The fajita seasoning will add a wonderful depth of flavor.

Pour 300ml of milk and 200ml of water into the pan with the chicken and onions. Stir gently to deglaze the pan, scraping up any delicious browned bits from the bottom.

Once the liquid comes to a boil, add 100g of pasta. Stir to ensure the pasta doesn’t clump together. Reduce the heat to medium, cover the pan, and let it simmer for about 10 minutes, or according to the pasta package directions, until the pasta is al dente (cooked through but still firm to the bite).

As the pasta cooks, the liquid will gradually reduce and thicken, creating a creamy sauce that coats the pasta. Stir occasionally to prevent sticking.

When the pasta is nearly cooked and the sauce has thickened to your liking, add the sautéed onions back into the pan and mix well with the pasta. Season with 1 teaspoon of salt and a pinch of black pepper.

Taste the pasta and adjust seasoning as needed. If it’s not salty enough for your preference, add a little more salt. Proper seasoning is key to enhancing all the flavors.
