This is a deliciously spicy beef and baby octopus hot pot made with leftover marinated beef from bulgogi. It adds a special touch to your holiday table!

Hot Pot Ingredients

  • 300g Beef (thinly sliced for bulgogi or hot pot)
  • 5 Baby Octopuses
  • 1/4 Onion
  • Small amount of Carrot
  • 1/2 Green Onion
  • Small amount of Cabbage
  • Small amount of Mushrooms (e.g., shiitake, oyster)
  • 30g Dried Glass Noodles
  • 500ml Water
  • 1 Cube Broth Base (or anchovy-kelp broth)

Beef Marinade

  • 3 Tbsp Soy Sauce
  • 1 Tbsp Sugar
  • Pinch of Black Pepper

Hot Pot Seasoning

  • 1/2 Tbsp Minced Garlic
  • Pinch of Black Pepper
  • 1/2 Tbsp Fish Sauce (or soup soy sauce)

Cooking Instructions

Step 1

First, soak the 30g of dried glass noodles in lukewarm water for about 20-30 minutes until softened. This will help the noodles absorb the broth beautifully.

In a bowl, combine the 300g of thinly sliced beef with 3 Tbsp soy sauce, 1 Tbsp sugar, and a pinch of black pepper. Mix well and let it marinate for at least 10 minutes to deepen the flavor.

Pour 500ml of water into a pot and add 1 cube of broth base. If you don’t have broth cubes, anchovy-kelp broth works wonderfully. Bring this to a boil to create the base for your hot pot.

Prepare your vegetables. Thinly slice the 1/4 onion and the carrot. Cut the 1/2 green onion diagonally. Chop the cabbage and mushrooms into bite-sized pieces.

Once the broth is boiling, carefully add the marinated beef. Gently stir to separate the slices so they don’t clump together.

As the beef cooks, scum and impurities may rise to the surface. Skim these off with a spoon for a clearer, cleaner broth.

Add all the prepared vegetables – onion, carrot, cabbage, and mushrooms – to the pot. Let them simmer. The fresh sweetness and texture of the vegetables will enrich the hot pot.

When the vegetables are partially cooked and the broth returns to a boil, add the 5 baby octopuses and the soaked glass noodles. Cook the baby octopus just until it changes color, as overcooking can make it tough.

Finally, stir in 1/2 Tbsp minced garlic, a pinch of black pepper, and 1/2 Tbsp fish sauce (or soup soy sauce). Taste and adjust seasoning if needed, adding salt or a little more sugar to your preference.
