  • Dried radish greens, 2 bundles (pre-boiled and prepared)
  • Anchovies for broth, 1 handful
  • Radish, 1 piece (approx. 100g)
  • Water, 800ml

Seasoning Ingredients

  • Gochujang (Korean chili paste), 1 Tbsp
  • Doenjang (Korean soybean paste), 2 Tbsp
  • Minced garlic, 1 Tbsp
  • Sesame oil, 1 Tbsp

Cooking Instructions

First, wash the dried radish greens thoroughly. Boil them in plenty of water until they become tender. Once boiled, rinse them under cold water, squeeze out excess moisture, and then cut them into bite-sized pieces. These prepared greens can be frozen for later use, making cooking convenient.

Wash the radish, peel it, and slice it thinly and flatly. This will add a refreshing flavor to the stew.

To create a deep broth flavor, remove the innards from the anchovies and place them in a pot along with the sliced radish.

Pour in 600ml of water, enough to cover the anchovies and radish, and bring it to a boil over high heat. Once boiling, reduce the heat to medium-low, cover the pot, and simmer for another 10 minutes to extract the savory broth from the anchovies and radish.

Meanwhile, cut the pre-prepared dried radish greens into rough, bite-sized pieces. Place the cut greens in a bowl, add 1 Tbsp gochujang, 2 Tbsp doenjang, 1 Tbsp minced garlic, and 1 Tbsp sesame oil. Mix everything together with your hands, ensuring the seasoning is evenly distributed throughout the greens. This step is crucial for infusing flavor into the radish greens.

Add all the seasoned dried radish greens to the savory anchovy broth and bring it back to a boil over high heat. To ensure no seasoning is wasted, add 200ml of water to the bowl used for mixing the greens, swirl it around to rinse, and pour this liquid into the pot as well.

Once the stew boils, reduce the heat and let it simmer for a bit longer until the radish greens are completely tender. Ladle the finished stew into bowls. Taste and if it’s not salty enough, add a pinch of salt or soup soy sauce to your preference.
