Soy sauce marinated eggs are a perfect side dish for when you have no appetite! This magical recipe requires no time over a hot stove; simply pour a delicious soy sauce mixture over pre-boiled eggs to complete. It’s a true rice thief, so be sure to try it! ^^

Main Ingredients

  • 10 Eggs
  • 1/4 Onion
  • 1 Green Onion
  • 1/2 Red and Green Chili Pepper (optional, for a spicy kick)

Soy Sauce Marinade

  • 12 Tbsp Soy Sauce (approx. 180ml)
  • 2 Tbsp Sugar (approx. 24g)
  • 2 Tbsp Corn Syrup (Oligodang) (approx. 28g)
  • 1 Tbsp Minced Garlic (approx. 10g)
  • Pinch of Black Pepper
  • 1 Tbsp Toasted Sesame Seeds (approx. 5g)
  • 300ml Water

For Boiling Eggs

  • 1 Tbsp Vinegar
  • 1/4 Tbsp Salt

Cooking Instructions

Step 1

First, let’s remove the chill from the eggs. Taking the eggs out of the refrigerator about an hour beforehand to let them come to room temperature helps prevent them from cracking when boiled and ensures the yolks stay centered. Fill a pot with plenty of water to cover the eggs and bring it to a boil. Once the water is boiling vigorously, add 1 Tbsp of vinegar and 1/4 Tbsp of salt. Vinegar and salt help the eggshells peel more easily and prevent the egg whites from leaking out if a crack forms. Now, carefully place the 10 eggs into the pot, making sure they don’t crack. I personally prefer to boil them for about 9 minutes, aiming for a state just before fully hard-boiled, where the yolk is slightly soft in the center. Feel free to adjust the boiling time according to your preference. For a fully hard-boiled egg, cook for about 11-12 minutes.

After boiling for 9 minutes, immediately transfer the eggs to cold water for about 5 minutes to completely cool them down. Cooling them in cold water causes the egg surface to contract, making the shells much easier to peel. Once the excess water is drained, carefully peel the eggs and set them aside. If the shells are difficult to peel, try gently cracking them all over and peeling them under running water.

Now, let’s make the delicious soy sauce marinade. Peel and finely mince 1/4 onion. Chop 1 green onion into small pieces, using both the white and green parts. If you’d like to add chili peppers (optional), remove the seeds and mince them finely to add to the mixture. This will give it a pleasant spicy kick.

In a bowl, combine 12 Tbsp soy sauce, 2 Tbsp sugar, and 2 Tbsp corn syrup. Stir well to dissolve the sugar. Next, add a pinch of black pepper, 1 Tbsp minced garlic, the finely minced onion and green onion, the optional chili peppers, and 1 Tbsp toasted sesame seeds. Finally, pour in 300ml of water and stir everything together until well combined to complete the marinade. You can use it as is, but lightly simmering it can deepen the flavors of the onion and green onion, enhancing the overall aroma. (Optional: You can choose to simmer this mixture for added depth.)

Arrange the peeled, boiled eggs neatly in an airtight container or food storage box. Pour the prepared soy sauce marinade over the eggs, ensuring they are mostly submerged. Close the lid tightly and refrigerate for at least half a day, or preferably overnight, to allow them to marinate. As time passes, the eggs will absorb the delicious soy sauce flavor, resulting in a deeper and richer taste. Your flavorful soy sauce marinated eggs are now ready! They make a fantastic side dish for rice or even a simple snack.
