This is an incredibly simple potato dish, perfect for enjoying with a light beer. They get wonderfully crispy when baked, and it’s fun to peel off each layer to eat! It’s also a fantastic dish for entertaining guests.

Ingredients

  • 1 medium potato
  • 1 Tbsp olive oil
  • 1/2 tsp coarse salt (or regular salt)
  • A pinch of black pepper
  • 2 slices of processed cheese
  • A little dried parsley (optional)

Cooking Instructions

Step 1

Wash the potato thoroughly; you can peel it or leave the skin on. To ensure the bottom doesn’t get cut through, place chopsticks or wooden skewers on both sides of the potato as guides. Then, thinly slice the potato into 2-3mm thick pieces. The chopsticks will prevent the knife from cutting too deep.

Place the sliced potatoes in a bowl of cold water and soak for about 10 minutes to remove excess starch. This step helps the potatoes become crispier on the outside and prevents the slices from sticking together.

After completely drying the potatoes with paper towels, place them in a bowl. Add 1 Tbsp of olive oil, 1/2 tsp of coarse salt, and a pinch of black pepper. Gently toss to ensure the seasoning is evenly distributed between the potato slices.

Arrange the seasoned potatoes on a baking sheet preheated to 180°C (350°F). Bake for 10 minutes for the first round. The edges of the potatoes will start to cook and dry out, becoming slightly crispy.

Remove the potatoes from the oven after the first bake. Carefully insert one slice of cheese into each slit between the potato slices. The melting cheese will help hold the slices together and add a delicious flavor.

Return the cheese-stuffed potatoes to the oven, still preheated to 180°C (350°F), and bake for another 5-7 minutes, or until the cheese is nicely melted and slightly golden. Adjust the baking time based on your oven’s performance.

Once removed from the oven, sprinkle a little dried parsley over the accordion potatoes for a beautiful presentation and a fresh aroma. These are best enjoyed immediately while warm!
