My daughter suddenly craved cheese dishes, so I whipped this up in no time! It’s a simple and satisfying way to make flavorful kimchi fried rice at home that everyone, especially kids, will love. The combination of gooey cheese and tangy kimchi is simply irresistible.

Main Ingredients

  • Well-fermented Kimchi, 1/2 bowl (about 1 cup)
  • White part of Green Onion, 1/2 stalk
  • Warm Cooked Rice, 1 bowl (about 2 cups)
  • Mozzarella Cheese, 1 handful (approx. 50g)
  • Corn Kernels, 2 Tbsp
  • Sesame Seeds, a pinch

Seasoning

  • Perilla Oil (Deulgireum), 2 Tbsp
  • Soy Sauce (Jin Ganjang), 1.5 Tbsp
  • Brown Sugar, 0.5 Tbsp

Cooking Instructions

Step 1

Prepare all the ingredients for your delicious kimchi fried rice. Finely chop the kimchi into bite-sized pieces. (Note: I only used half the bag of cheese in the photo, but feel free to adjust the amount to your liking!)

Heat a pan over medium heat and add 2 Tbsp of perilla oil. Add the chopped white part of the green onion and sauté for about 2 minutes until fragrant. The sweet aroma of the green onion will infuse the oil, adding depth to the flavor.

Once the green onions are lightly golden and fragrant, reduce the heat slightly to low-medium. Add the 1/2 bowl of chopped kimchi and 0.5 Tbsp of brown sugar. Stir-fry everything together. The brown sugar helps to mellow the sourness of the kimchi and enhances its savory notes.

Turn the heat back up to medium. Pour 1.5 Tbsp of soy sauce along the edges of the pan. As the soy sauce hits the hot pan, it will slightly caramelize, creating a richer, deeper flavor profile.

The soy sauce will begin to bubble and reduce as it mixes with the ingredients. Continue to stir well, allowing the flavors to meld and the sauce to thicken slightly.

Add 1 bowl of warm cooked rice to the flavorful kimchi mixture. Using a spatula, gently mix and stir-fry for about 1 minute, being careful not to mash the rice grains. Ensure each grain is evenly coated with the delicious seasoning.

Spread the fried rice evenly in the pan. Reduce the heat to medium-low and press the rice down gently for about 10-20 seconds. This helps to create a slightly crispy texture, similar to a light crust.

Once the rice is spread out, lower the heat to low. Gather the fried rice to one side of the pan and add 2 Tbsp of corn kernels and 1 handful (approx. 50g) of mozzarella cheese to the empty space.

Using your spatula, carefully flip and fold the fried rice from the side without cheese over onto the cheese. This helps the cheese to melt and integrate beautifully with the rice.

Cover the pan with a lid and let it cook on very low heat for about 1-2 minutes, or until the cheese is completely melted and gooey. Steaming it gently ensures the cheese melts smoothly and evenly.

Once the cheese looks perfectly melted and slightly golden, turn off the heat. Sprinkle a pinch of sesame seeds over the top. Transfer your beautifully cheesy kimchi fried rice to a serving plate, and it’s ready to be enjoyed!
