Main Ingredients- 500g dried anchovies (one pack)
- 10 cloves garlic
- 3 green peppers
- A pinch of sesame seeds
Cooking Instructions
Step 1
First, sift the dried anchovies to remove any powder. If needed, lightly stir-fry them in a dry pan over low heat for 2-3 minutes to remove moisture; this will enhance their crispiness. Let them cool down a bit after stir-frying. This step also helps reduce any fishy odor, making them more delicious.
Step 2
Thinly slice the garlic or mince it. Remove the seeds from the green peppers and slice them thinly on an angle. Preparing them this way ensures they cook at a similar rate to the anchovies, and the garlic flavor will infuse better, resulting in a tastier dish.
Step 3
Heat a pan with a little cooking oil over medium-low heat. Add the sliced garlic and stir-fry slowly to release its aroma. Be careful not to burn the garlic; stir-fry until it’s lightly golden. Once the garlic starts cooking, add the thinly sliced green peppers and stir-fry together to add fragrance.
Step 4
When the garlic and peppers are somewhat cooked, add 2 Tbsp of soy sauce and 3 Tbsp of sugar. Stir well and cook. Be mindful of the heat to prevent the sauce from burning.
Step 5
As the sauce begins to simmer, add the pre-stir-fried and cooled dried anchovies. Stir quickly to ensure the sauce coats the anchovies evenly. Use chopsticks or a spatula to gently mix, preventing the anchovies from sticking to the pan or burning.
Step 6
Finally, add 3 Tbsp of honey or corn syrup to give it a glossy finish and stir-fry briefly. Adding honey or corn syrup will coat the anchovies nicely, making them moist and delicious, with a sweetness that children will love.
Step 7
Just before turning off the heat, sprinkle in some sesame seeds for a nutty flavor and aroma. Sesame seeds significantly enhance the overall flavor of stir-fried dishes.
Step 8
Transfer the well-stir-fried anchovies with garlic to a plate for a delicious side dish! While it’s tasty served hot, it becomes even crispier after cooling down a bit. Store in an airtight container in the refrigerator, and it can be enjoyed for several days.
