  • Tteokguk rice cakes: 2 cups (using a standard paper cup)
  • Ham: 1.5 cups (cut into bite-sized pieces, using a standard paper cup)

Spicy & Sweet Sauce

  • Gochujang (Korean chili paste): 2 Tbsp
  • Soy sauce: 0.5 Tbsp
  • Ketchup: 1.5 Tbsp
  • Oligodang (corn syrup) or Mulyeot (starch syrup): 3 Tbsp

Cooking Instructions

First, measure out your tteokguk rice cakes and ham. Use 2 cups of tteokguk rice cakes and about 1.5 cups of ham, measured with a standard paper cup. Cut the ham into bite-sized pieces. (Tip: If your tteokguk rice cakes are hard, soaking them in cold water for about 30 minutes will make them softer for cooking.)

The key to delicious ham rice cakes is the sauce! In a bowl, combine 2 Tbsp of gochujang, 1.5 Tbsp of ketchup, 3 Tbsp of oligodang (or mulyeot), and 0.5 Tbsp of soy sauce for extra flavor. Mix well until there are no lumps. You can substitute oligodang with mulyeot if preferred.

Heat a little cooking oil in a pan over medium heat. Add the cut ham and stir-fry it first. Cook until it releases its savory aroma and becomes slightly golden brown; this will enhance the flavor.

Once the ham is lightly browned, add the prepared tteokguk rice cakes to the pan. Stir occasionally to prevent the rice cakes from sticking to the bottom of the pan while they cook.

When the rice cakes become soft and start to turn translucent, pour the prepared spicy and sweet sauce over everything in the pan. Drizzle it evenly to coat the rice cakes and ham.

Now, stir-fry everything over medium-low heat to ensure the sauce evenly coats the ham and rice cakes. Be careful not to burn the sauce. Continue stirring until the rice cakes are chewy and the sauce is nicely glazed onto the ham.

For an extra touch, consider crushing some nuts (like peanuts or walnuts) and sprinkling them on top, similar to how dakgangjeong (sweet and spicy chicken) is served.
