Stew Ingredients

  • Fresh chives, a generous amount (about 1 handful)
  • Rice water, 400ml (or anchovy-kelp broth)
  • 1/2 sweet onion, chopped
  • 1/2 Cheongyang chili pepper (for spicy kick, optional)
  • 1/2 potato, cut into bite-sized pieces
  • 1 handful of beef for stew
  • 1 Tbsp Doenjang (fermented soybean paste)
  • 0.5 Tbsp Gochujang (red pepper paste)

Cooking Instructions

The foundation of a delicious Chive Doenjang Jjigae is its broth! Prepare 400ml of milky rice water, which is obtained from rinsing rice. Using anchovy-kelp broth will also add a deep flavor.

Chop half a small onion into bite-sized pieces. The sweetness of the onion will enhance the umami of the Doenjang Jjigae.

If you prefer a spicy flavor, finely chop half a Cheongyang chili pepper. If you don’t like it too spicy, you can omit it or use a regular chili pepper instead.

Cut half a potato into bite-sized pieces. The potatoes will make the stew more hearty and satisfying.

In a ttukbaegi (earthenware pot) perfect for simmering stews, add the chopped onion, potato, and chili pepper. Next, add a handful of beef for stew. Patting the beef dry with paper towels beforehand will result in a cleaner taste.

Arrange all the prepared vegetables and beef nicely in the ttukbaegi.

Now it’s time to add the seasonings that will define the stew’s flavor. Start with a generous spoonful (1 Tbsp) of rich and savory Doenjang.

Adding a little Gochujang to Doenjang Jjigae provides a spicy kick and a deeper, more complex flavor. Add 0.5 Tbsp of Gochujang. It’s also excellent as a side dish with drinks!
