Homemade Omurice Recipe for a Delicious Family Meal
Introducing Omurice, the ultimate crowd-pleaser that kids absolutely adore! This dish features a fluffy, tender egg blanket enveloping a flavorful fried rice packed with a variety of colorful vegetables, ham, and fish cakes. It’s a feast for the eyes and the palate. Fried Rice Ingredients- 1/4 Onion
- 1/4 Carrot
- Small piece of Green Onion (white part)
- 1/4 Mushroom (optional, to taste)
- 1/4 Zucchini
- 1/4 Spam can
- 1/4 Square Fish Cake
- Small piece of Bell Pepper (for color, optional)
- 4 Eggs
- 3 Bowls of Cooked Rice
- 3 Tbsp Milk
- Pinch of Salt
- 1 Tbsp Cooking Wine (Mirin or Sake)
Omurice Sauce- 3 Tbsp Ketchup
- 2 Tbsp Tonkatsu Sauce
- 2 Tbsp Barbecue Sauce
- 1 Tbsp Oyster Sauce
- 1 Tbsp Cooking Wine (Mirin or Sake)
- 170ml Milk
- 1 Tab Butter (approx. 10g)
- Mayonnaise (for garnish)
- Parsley Flakes (for garnish)
- 3 Tbsp Ketchup
- 2 Tbsp Tonkatsu Sauce
- 2 Tbsp Barbecue Sauce
- 1 Tbsp Oyster Sauce
- 1 Tbsp Cooking Wine (Mirin or Sake)
- 170ml Milk
- 1 Tab Butter (approx. 10g)
- Mayonnaise (for garnish)
- Parsley Flakes (for garnish)
Cooking Instructions
Step 1
First, finely mince all the vegetables (onion, carrot, green onion, mushroom, zucchini, bell pepper), ham, and fish cake into small, bite-sized pieces. This ensures they mix well with the rice and create a pleasant texture.
Step 2
In a bowl, whisk together 4 eggs, 1 tablespoon of cooking wine, 3 tablespoons of milk, and a pinch of salt until slightly frothy. Adding milk will make the egg omelet extra soft and moist.

Heat a lightly oiled non-stick pan over medium-low heat. Add the minced onion and green onion and sauté for 2-3 minutes until fragrant and the onion becomes translucent.

Add the minced carrot, mushroom, zucchini, bell pepper, ham, and fish cake to the pan. Stir-fry everything together until the moisture from the vegetables evaporates. Season with a pinch of salt.

Transfer the sautéed vegetables, ham, and fish cake to a separate bowl.

Add 3 bowls of warm cooked rice to the bowl with the sautéed ingredients. If using cold rice, heat it in a pan with a little oil until it becomes fluffy before adding it here. This prevents the rice from clumping.

Using a spatula or spoon, thoroughly mix the rice with the sautéed ingredients. Ensure each grain of rice is coated with the flavors of the vegetables and other additions.

Now, let’s make the omurice sauce. In a small saucepan, combine 3 tablespoons of ketchup, 2 tablespoons of tonkatsu sauce, 2 tablespoons of barbecue sauce, 1 tablespoon of oyster sauce, 1 tablespoon of cooking wine, and 170ml of milk. Whisk everything together and bring to a simmer over medium-low heat, stirring constantly.

Once the sauce begins to bubble, reduce the heat to low and stir in a tab of butter. The butter will melt, adding richness and a glossy finish to the sauce. Stir gently until fully incorporated.

Pack the prepared fried rice tightly into a bowl or a mold of your desired shape, pressing down firmly to create a compact mound.

Wipe the pan clean and heat it over low heat. Lightly grease with butter or oil. Pour the whisked egg mixture thinly into the pan. Cook just until the edges begin to set and the center is still slightly runny; turn off the heat. Aim for a soft, delicate omelet, like a thin crepe.
