- 1 Tbsp Oyster Sauce
- 1 Tbsp Corn Syrup (or similar sweetener)
- 2 Tbsp Sugar
- 1 Tbsp Cheongju (rice wine, optional for deglazing)
- 100ml Water
- 3 Tbsp Grapeseed Oil
- 1 Tbsp Minced Garlic
- 1 Onion (sliced)
- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Oyster Sauce
- 1 Tbsp Corn Syrup (or similar sweetener)
- 2 Tbsp Sugar
- 1 Tbsp Cheongju (rice wine, optional for deglazing)
- 100ml Water
Cooking Instructions
Step 1
Heat grapeseed oil in a pan over medium-low heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Be careful not to burn the garlic.
Step 2
Add the sliced onion and stir-fry until softened and translucent, about 3-4 minutes. This helps to bring out the sweetness of the onion.
Step 3
Add the gochujang and stir-fry with the onions and garlic for about 1 minute. Cooking the gochujang like this helps to deepen its flavor and reduce any raw taste.
Step 4
Stir in the gochugaru (Korean chili flakes) and mix well. Adjust the amount to your spice preference.
Step 5
Add the oyster sauce for a boost of savory flavor (umami).
Step 6
Add the corn syrup for a glossy finish and sweetness.
Step 7
Add the sugar and balance the sweet and savory flavors.
Step 8
Pour in the cheongju (rice wine, if using) and let it bubble for a few seconds to cook off the alcohol. This also helps to tenderize the ingredients.
Step 9
Pour in the water and stir everything together to create the sauce. Bring it to a simmer and let it cook for about 1 minute until it slightly thickens.
Step 10
Add the assorted jeon, cut into bite-sized pieces, to the pan. Gently toss to coat the jeon evenly with the sauce. Be careful not to break the jeon apart.
Step 11
Add the shiitake mushrooms (if using, for added flavor and texture) and stir-fry over medium heat for about 5 minutes, or until the jeon is well coated and heated through. Stir occasionally to prevent sticking.
Step 12
Add the diagonally sliced green onions and stir for about 30 seconds until fragrant.
Step 13
Finally, add the diagonally sliced green and red chili peppers. Stir-fry for another minute until the peppers are slightly softened but still have a bit of crunch. This adds a fresh element and vibrant color to the dish.
Step 14
Your delicious and visually appealing ‘Spicy & Sweet Gochujang Stir-Fried Jeon’ is ready! It’s a fantastic way to give new life to leftover holiday jeon and a wonderful dish for any occasion.
