  • 3 Tbsp cooked rice (preferably day-old)
  • 4 Tbsp sugar
  • 1/2 Tbsp margarine or butter
  • 5 Tbsp warm milk
  • 1 pinch of salt
  • 3 Tbsp water

First, let’s make the nurungji! Without preheating the pan, spread the cooked rice thinly and evenly. Cook over low heat, allowing each grain to toast until golden brown. It’s crucial to monitor it closely to prevent burning and ensure it doesn’t stick to the pan. Once the rice forms a crispy sheet, add a little oil (margarine or butter) to the pan and gently fry the nurungji on both sides until golden and extra crispy. This step enhances the delightful crunch.

Now, let’s prepare the salted caramel sauce to coat our nurungji. In a clean frying pan, combine the 4 Tbsp of sugar and 3 Tbsp of water. Once the sugar starts to dissolve, reduce the heat to medium-low and stir gently as it simmers. Be careful not to boil over high heat, as the sugar can burn easily. When the caramel begins to turn golden, add the 1/2 Tbsp of butter (or margarine) and let it melt in.

As the edges of the caramel sauce start to turn a light golden brown, carefully pour in the 5 Tbsp of milk, which has been warmed in the microwave for about 10 seconds. Add the milk slowly and stir quickly, as the caramel may splatter. Once the milk is incorporated, creating a smooth caramel sauce, add a pinch of salt to achieve that perfect sweet and salty balance. Finally, dip the fried nurungji into the caramel sauce, turning quickly to coat evenly, and then immediately remove it. Be mindful not to soak the nurungji for too long, as it can become soggy.
