Main Ingredients- Beef (for bulgogi) 350g
- Cabbage 1/4 head
- Onion 1/2
- Zucchini 1/2
- Carrot 1/2
- Green onion 1-2 stalks
- Mushrooms (optional) 1 handful
Seasoning Ingredients- Garlic (or minced garlic) equivalent to 3 cloves
- Soy sauce (low-carb, additive-free) 2-3 Tbsp
- Anchovy sauce (100% anchovy) 1/2 Tbsp
- Allulose (additive-free) 1/2 Tbsp
- Ginger powder 1 tsp
- Cold-pressed sesame oil 1 tsp
- Garlic (or minced garlic) equivalent to 3 cloves
- Soy sauce (low-carb, additive-free) 2-3 Tbsp
- Anchovy sauce (100% anchovy) 1/2 Tbsp

Step 1
For a keto-friendly diet, the key to delicious bulgogi lies in selecting the right seasoning ingredients. By using soy sauce made purely from water, salt, and soybeans without additives, anchovy sauce made from 100% anchovies, cold-pressed sesame oil if possible, and allulose without added sugars, you can enjoy a healthy and clean-tasting bulgogi without worrying about blood sugar spikes. Let’s create a delicious meal with these wholesome ingredients!
Step 2
Slice the bulgogi beef into bite-sized pieces. In a large bowl, combine the beef with all the seasoning ingredients except the anchovy sauce and sesame oil (garlic, soy sauce, allulose, ginger powder). Gently massage the marinade into the meat with your hands until well combined. Let it marinate for at least 15 minutes to allow the flavors to deepen.

While the beef is marinating, prepare the vegetables. Chop the cabbage into roughly 2-3cm pieces. After washing the cabbage thoroughly, soak it in water with a splash of vinegar for about 10 minutes. This helps remove any residual pesticides or unwanted elements, ensuring a safer meal. Rinse with cold water and drain well afterwards.

Slice the onion thickly, and cut the zucchini and carrot into half-moon or bite-sized pieces. Lightly rinse the mushrooms under running water to remove any dirt, then separate or slice them as desired. Cut the green onions into approximately 3-4cm lengths. Cutting them this way allows their fragrant aroma to infuse beautifully into the dish.

Heat a large pan or wok over medium-high heat and add a generous amount of avocado oil (or your preferred healthy cooking oil). Once the pan is hot, add the chopped green onions and stir-fry them until fragrant and slightly softened, being careful not to burn them. This process extracts the sweet aroma from the green onions into the oil, enhancing the overall flavor of the bulgogi.
Step 6
Once the green onions are fragrant, reduce the heat to medium. Push the green onions to one side of the pan and add the cabbage, onion, carrot, and mushrooms (excluding the zucchini) that you prepared earlier. Stir-fry these vegetables until they begin to soften slightly. The zucchini will be added later.
Step 7
When the vegetables are about halfway cooked, pour 1 tablespoon of soy sauce around the edges of the pan. This allows the soy sauce to caramelize slightly, adding a richer, deeper umami flavor to the dish. Quickly stir-fry to coat the vegetables evenly.

When the vegetables are about half-cooked, add the marinated beef and the sliced zucchini to the pan. If the beef is clumped together, gently separate the pieces with chopsticks or a spatula to ensure even cooking. Keep stirring the mixture to prevent the beef from sticking and to cook it through.

As the beef is nearing doneness, add about half a tablespoon to one tablespoon of anchovy sauce for an extra boost of savory flavor. Freshly ground black pepper can also be added to taste. Be mindful with the anchovy sauce, as it can be quite potent, so adjust the amount according to your preference.

Once the onions are translucent and the zucchini is tender, the dish is almost ready. Immediately after turning off the heat, drizzle in 1 teaspoon of sesame oil. This final touch enhances the nutty aroma and flavor. Give everything a final gentle stir to combine all the delicious ingredients. Serve hot with rice or wrapped in fresh lettuce leaves!
