Spicy Squid Jeot and Seaweed Fried Rice

This fried rice is packed with spicy and sweet squid jeot, healthy seaweed, and plenty of garlic! You can create a wonderfully flavorful fried rice using just the squid jeot without any other seasonings. It’s incredibly delicious and satisfying!

Ingredients

  • Dried seaweed 3g
  • Onion 40g
  • Potato 50g
  • Garlic 25g
  • Cooked rice 200g
  • Butter 1 Tbsp
  • Cooking wine (Mirin or Cheongju) 1 Tbsp
  • Sesame oil 1/2 Tbsp
  • Sesame seeds 1 Tbsp

Cooking Instructions

Step 1

First, prepare the dried seaweed. Soak 3g of dried seaweed in water for about 20 minutes until fully rehydrated and softened. This step ensures a pleasant texture for the fried rice.

Dice the onion (40g) and potato (50g) into small, roughly 1cm cubes. Cutting them into bite-sized pieces helps them cook evenly.

Once the seaweed is rehydrated, drain it in a colander and rinse thoroughly under running water to remove any grit. Squeeze out excess water and chop it into bite-sized pieces, about 2-3cm long, for the fried rice.

Take the desired amount of squid jeot and cut it into small, bite-sized pieces (about 1cm) with scissors. Since squid jeot is already seasoned, no additional seasoning is needed.

Melt 1 Tbsp of butter in a heated pan over medium heat. Add the thinly sliced or minced garlic (25g) and sauté until fragrant and lightly golden brown. Be careful not to burn the garlic, as it will add a wonderful aroma to the dish.

Once the garlic is golden, add the chopped seaweed and diced potatoes to the pan. Continue to stir-fry over medium heat.

Cook until the potatoes are tender and slightly golden brown, about 3-4 minutes. Cooking the potatoes sufficiently will improve the overall texture of the fried rice.

Now, add the prepared squid jeot, diced onion, and 1 Tbsp of cooking wine (like mirin or cheongju) to the pan. Stir-fry everything together. The cooking wine helps to reduce any potential fishy odor from the squid jeot and enhances its savory flavor.

When the onions become translucent, add 200g of warm cooked rice to the pan. Use a spatula to break up any clumps of rice and mix it well with the other ingredients.

Stir-fry everything evenly until well combined. The seasoning from the squid jeot provides enough flavor, so no extra salt or soy sauce is typically needed.

Once the rice is well-fried and slightly toasted, press the rice against the bottom of the pan for a minute or two to create a slightly crispy ‘nurungji’ (scorched rice) layer. This adds another delightful texture and flavor dimension. Finally, drizzle in 1/2 Tbsp of sesame oil and mix it through.
