Fragrant Earl Grey Muffins
Bake Delicious Earl Grey Muffins at Home
Muffins are wonderful baked goods that are relatively easy to make and can be transformed into elegant treats with the right ingredients. I decided to create Earl Grey Muffins using some delicious Earl Grey tea I had. These muffins offer a delightful aromatic twist, perfect for enjoying with a cup of tea or as a lovely gift.
Muffin Batter Ingredients- 100g Cake flour (or all-purpose flour)
- 35g Sugar
- 50g Unsalted butter, softened to room temperature
- 1g Salt
- 1 Large egg, at room temperature
- 2g Baking powder
- 1g Baking soda
- 20g Heavy cream
- 5g Finely ground Earl Grey tea leaves
Earl Grey Icing Ingredients- 10g Heavy cream
- 1g Finely ground Earl Grey tea leaves
- 30g Powdered sugar (confectioners’ sugar)
- 10g Heavy cream
- 1g Finely ground Earl Grey tea leaves
- 30g Powdered sugar (confectioners’ sugar)
Cooking Instructions
Step 1
Begin by creaming the softened butter in a bowl until smooth. Gradually add the room-temperature egg, mixing well after each addition until fully incorporated and no lumps remain. In a separate small bowl, gently warm the 20g of heavy cream and steep the 5g of finely ground Earl Grey tea leaves in it for about 5 minutes to infuse the cream with flavor. Strain out the tea leaves if you prefer a smoother consistency, or leave them in for texture. Add this Earl Grey-infused cream to the creamed butter and egg mixture and combine.
Step 2
In another bowl, sift together the 100g of cake flour, 35g of sugar, 2g of baking powder, 1g of baking soda, and 1g of salt. Sifting the dry ingredients at least twice helps to aerate them and prevent lumps in the batter. Add the sifted dry ingredients to the wet ingredients. Using a spatula, gently fold the ingredients together until just combined. Be careful not to overmix; stop mixing as soon as you no longer see streaks of flour.
Step 3
While you can bake the muffins immediately, chilling the batter in the refrigerator for about 30 minutes can improve their texture. While the batter is chilling, line your muffin tin with paper liners. Once chilled, divide the batter evenly among the prepared muffin cups, filling each about two-thirds to three-quarters full. This recipe yields approximately 4 standard-sized muffins.
Step 4
Bake in a preheated oven at 180°C (350°F) for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. The well-creamed butter and egg mixture should help them rise nicely and crack beautifully on top. Transfer the baked muffins to a wire rack to cool completely. For an extra touch of sweetness and elegance, let’s add an Earl Grey icing.
Step 5
To make the Earl Grey icing, combine 10g of heavy cream, 1g of finely ground Earl Grey tea leaves, and 30g of powdered sugar in a small bowl. Whisk until smooth and well combined. You can adjust the amount of powdered sugar to achieve your desired consistency – add more for a thicker icing. Drizzle or spread the prepared icing over the cooled muffins.
Step 6
As an optional finishing touch, you can melt some chocolate and drizzle it over the muffins for an extra layer of flavor and visual appeal. Your delightful Earl Grey Muffins, with their subtle tea aroma and sweet icing, are now ready to be enjoyed. They pair wonderfully with a hot beverage!
