Chewy and Savory Braised Squid in Soy Sauce

This braised squid in soy sauce is so delicious that my family always asks for seconds, often saying it’s even better than what you get at restaurants! Main Ingredients

  • 2 squids (body part, about 300-400g)
  • 1 red chili pepper
  • 1 green chili pepper (like Serrano or similar)

Seasoning Ingredients

  • 3 Tbsp Bumil Soy Sauce (or regular soy sauce)
  • 1 Tbsp sugar
  • 2 Tbsp corn syrup (or rice syrup)
  • 1/2 Tbsp gochugaru (Korean red pepper flakes)
  • 3 Tbsp cooking wine (like Mirin)
  • 5 Tbsp water
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

First, clean the fresh squid thoroughly. Bring a pot of water to a boil, add the whole squid bodies, and blanch for about 3 minutes. This short blanching helps to keep the squid tender and chewy, preventing it from becoming tough. After blanching, rinse the squid under cold water, let it cool slightly, then slice it into bite-sized pieces (about 1-1.5 cm thick).

In a bowl, combine all the ‘Seasoning Ingredients’: Bumil Soy Sauce (or regular soy sauce), sugar, corn syrup, gochugaru, cooking wine, and water. Whisk everything together until well combined to create the braising sauce.

Heat a pan over medium-low heat and pour in the prepared sauce. Once the sauce begins to bubble, add the sliced squid. Reduce the heat to medium and let the squid simmer gently in the sauce, allowing it to absorb the flavors. Stir occasionally to prevent sticking and to ensure even cooking for about 5-7 minutes, or until the sauce has thickened and coated the squid nicely.

When the squid turns a tempting color and the sauce has reduced to a desirable consistency, add the thinly sliced red and green chili peppers. Stir and cook for another 1-2 minutes. The fresh crunch and mild heat from the chilies will elevate the overall flavor of the braised squid. Finally, turn off the heat and drizzle in 1 tablespoon of sesame oil, giving it a final toss.
