Main Ingredients

  • 1 can Tuna (drained)
  • 1/2 Onion
  • 3 Korean Green Chilies (Cheongyang)

Cooking Instructions

Step 1

First, prepare half an onion. Wash it thoroughly and then slice it thinly. Slicing it not too thick will help the sauce penetrate better and improve the texture.

Step 1

Step 2

This is how the sliced onion should look. Slice them thinly like this.

Step 2

Step 3

Prepare 3 Korean green chilies. Remove the stems, wash them, and then mince them finely. If you enjoy a spicier kick, feel free to adjust the amount of chilies.

Step 3

Step 4

Get a medium-sized can of tuna ready. Open the can and drain the oil completely using a sieve. If there’s residual oil, the sauce might turn out greasy.

Step 4

Step 5

Heat a frying pan over medium heat. Add the drained tuna, then immediately add all the sliced onion. Stir-fry until the onion becomes translucent. This process will enhance the onion’s natural sweetness.

Step 5

Step 6

Once the onion is somewhat cooked, add 1 tablespoon of minced garlic and the minced green chilies. Stir-fry them together. The aroma of garlic will start to release, adding more depth of flavor.

Step 6

Step 7

Continue to stir-fry until the ingredients turn a nice golden brown. The edges of the onion should start to look slightly browned.

Step 7

Step 8

Now, add the completely drained tuna to the pan. Mix it well with the sautéed onion, garlic, and chilies, and continue to stir-fry. It’s helpful to break up the tuna with chopsticks or a fork as you stir-fry to prevent it from clumping.

Step 8

Step 9

Pour in 2.5 tablespoons of soy sauce. You can pour it along the edge of the pan or directly over the ingredients. As the soy sauce slightly caramelizes, it adds a wonderful umami flavor.

Step 9

Step 10

Add 1 heaped tablespoon of sugar. You can adjust the sweetness to your preference. Sugar helps to bring out the savory notes from the onion and tuna.

Step 10

Step 11

Finally, drizzle in a generous amount of sesame oil. Stir-fry for about 30 more seconds to let all the flavors meld together. Be careful not to overcook, as the aroma of sesame oil can dissipate.

Step 11

Step 12

Spoon a generous amount of the finished soy sauce tuna stir-fry sauce over a bowl of warm rice. Simply mixing it in makes for a delicious rice dish.

Step 12

Step 13

Sprinkle a good amount of toasted sesame seeds on top for a final touch, and your savory soy sauce tuna stir-fry sauce is ready! It’s also fantastic as a sauce for fried rice or cold noodles.
