  • 300g Bread flour made from rice
  • 40g Coconut oil
  • 30g Unrefined cane sugar (or regular sugar)
  • 3g Instant dry yeast
  • 3g Salt
  • 270g Lukewarm water

First, in a mixing bowl, measure out 40g of coconut oil, 30g of unrefined cane sugar, and 3g of salt. Combine them all together. These ingredients will add moisture and flavor to your bread.

In another bowl, combine 300g of bread flour made from rice and 3g of instant dry yeast. Finally, prepare 270g of lukewarm water. This completes the preparation of all ingredients needed for the dough. Ensure the water is not too hot; it should feel comfortably warm to the touch.

Mix all the prepared ingredients together. Start by gently combining them with a spatula, then knead intensively for 5 minutes (Knead 1). After the dough has started to come together, let it rest for 5 minutes (Rest 1). Then, knead again for another 5 minutes (Knead 2). Finally, allow it to rest for a final 5 minutes. This completes a total of 10 minutes of kneading and 10 minutes of resting. This process helps activate the rice flour’s properties, resulting in a softer bread.

Divide the rested dough into four equal portions. Ensuring each portion is similar in size will help the bread bake evenly.

Take one portion of the dough and gently press it with your palm to form an oval shape. Then, fold it in half from top to bottom.

Now, roll up the folded dough. Pinch the seam firmly to ensure it doesn’t open up during baking.

Shape the remaining three portions of dough in the same manner. Place the four shaped dough pieces side-by-side in your loaf pan. Leave a little space between each dough piece, as they will expand during baking.

Before baking, let the dough undergo its first rise (proofing). You can easily do this at home even without a proofing machine. Place a cup of boiling water in your microwave and close the door. This creates a warm, humid environment (around 26-28°C and 80% humidity), ideal for the dough to rise beautifully. Let it proof for about 30-40 minutes, or until the dough has doubled in size. If it looks puffy and has increased significantly in volume, it’s ready.

Preheat your oven to 185°C (365°F) for 10 minutes. Once preheated, place the loaf pan in the oven and reduce the temperature to 175°C (350°F). Bake for 25-30 minutes.
