Butternut Squash Soup Ingredients

  • 1 Butternut squash (medium size)
  • 1/2 Onion
  • 1/2 Tbsp Salt (or to taste)
  • 700ml Water
  • 300ml Milk (or use heavy cream for an even richer flavor)

First, wash the butternut squash thoroughly, then cut it in half. This makes it easier to remove the seeds.

Using a spoon or a small knife, scoop out and discard all the seeds and stringy insides from the squash. Removing the fibrous material thoroughly will result in a smoother soup.

Peel the tough skin off the butternut squash. A vegetable peeler works well for this. (Optional: You can leave the skin on, but peeling is recommended for a creamier texture.)

Cut the peeled squash into bite-sized cubes, about 1-1.5 inches (2-3 cm) in size. Place all the cut squash into a pot. Cutting them this way ensures they cook evenly.

Peel and thinly slice half an onion, then add it to the pot with the squash. Pour in 700ml of water. Adjust the water level so it mostly covers the squash.

Bring the mixture to a boil over high heat, then reduce the heat to medium-low and simmer for about 10 minutes, or until the squash is fork-tender. The onions will also soften completely, enhancing the squash’s natural sweetness.

Once the squash and onions are tender, pour 300ml of milk into a blender. Carefully transfer the cooked squash and onion mixture from the pot into the blender. Blend until very smooth. Be cautious as the mixture will be hot.

As you blend, you’ll notice the squash turning into a beautifully smooth, velvety puree with a gorgeous orange hue. It’s a visually appealing transformation.

Pour the blended squash mixture back into the pot. Add about 500ml of the cooking liquid from the pot to preserve the ingredients’ flavor. Simmer over low heat, stirring constantly with a spatula to prevent sticking to the bottom.
