Basic Ingredients

  • 100g Beef (for stew or bulgogi cut)
  • 4 Tbsp Doenjang (Korean soybean paste – use homemade or store-bought as preferred)
  • 2 cups Water (approx. 400ml)
  • 1 medium Potato
  • 1/2 medium Onion
  • 2 Korean Green Chili Peppers (adjust for spice level)
  • 1/2 Mushroom (e.g., shiitake, king oyster)
  • 1/4 Zucchini
  • A little Green Onion
  • 1/2 block Firm Tofu

Cooking Instructions

Step 1

First, prepare all the ingredients for the Doenjang Jjigae. Dice the potato, onion, and zucchini into about 1cm thick pieces. Cut the tofu into 1.5cm cubes. Slice the beef into bite-sized pieces.

Slice the Korean green chili peppers and green onions diagonally to add a fresh, spicy kick and aroma. If you have red chili peppers, slicing them in as well will add a more appealing color.

Pour 2 cups (approx. 400ml) of water into a pot and add the diced potatoes and onions. As these vegetables simmer, they will soften and infuse the broth with flavor.

Once the water comes to a boil, wait a moment.

Add the sliced beef to the pot. The beef will enrich the flavor of the stew.

Add about 4 tablespoons of doenjang and dissolve it well. After adding the doenjang, reduce the heat to medium and simmer for about 5-7 minutes, or until the potatoes are tender. Stir occasionally to prevent clumps of doenjang.

Once the potatoes are somewhat cooked, add the sliced zucchini and mushrooms. Simmer for another 2-3 minutes until the vegetables are tender.

Finally, add the cubed tofu. Gently stir to avoid breaking the tofu.

Add the prepared green onions and Korean green chili peppers (and red chili peppers, if using) and bring to a brief boil. Your delicious Doenjang Jjigae is now complete! Let it simmer for just another 1-2 minutes to allow the flavors to meld.
