The Witch’s Soup is a special dietary recipe originally devised for severely obese patients who require rapid weight loss. It’s best consumed for a short period of 1-2 weeks, as prolonged adherence isn’t recommended. This recipe focuses on maintaining the crucial ratio of Onion 2: Carrot 2: Celery 1, providing a detoxifying soup that’s excellent for dietary control.

Main Ingredients

  • 5 Tomatoes (approx. 1kg)
  • 300g Onion
  • 100g Potato (for added satiety, optional)
  • 3 Celery stalks
  • 200g Broccoli
  • 300g Carrot
  • 300g Cabbage

Broth & Seasoning

  • 1000ml Water
  • 2 Chicken Stock cubes
  • 2 Tbsp Curry Powder

Cooking Instructions

Step 1

First, prepare your fresh vegetables. Tomatoes, cabbage, and onions are the foundational ingredients for Witch’s Soup, so be sure to include them. Feel free to add or omit other vegetables according to your preference.

Take the 5 tomatoes (totaling about 1kg) and remove the core. To help with peeling, make a deep cross-shaped incision on the top of each tomato.

Carefully place the incised tomatoes into boiling water and blanch for about 10 seconds. Be cautious not to overcook them, as they can become too soft.

Gently rotate the blanched tomatoes in the water. You’ll notice that the skins will become very soft and easy to peel off.

After peeling, discard the skins and dice the tomatoes into roughly 1cm cubes. These will be added later in the cooking process.

Peel the onion and dice it finely into approximately 1cm pieces. If you’re using potato, peel it and dice it to a similar size as the onion. (Tip: While not traditionally included in Witch’s Soup, I’ve added about 100g of potato to enhance satiety.)

Finely chop the celery stalks and leaves into about 1cm pieces. (Tip: If you’re not fond of celery’s strong aroma, you can reduce the amount or omit it.) Break the broccoli into bite-sized florets.

Wash the carrot thoroughly, peel it, and then dice it into uniform, approximately 1cm cubes, similar in size to the onion.

Remove the core from the cabbage and slice it into thick shreds or large pieces. Using a generous amount will contribute to the soup’s rich flavor.

In a deep pot, add the finely diced onion and 100ml of water. Sauté over medium heat until the onion becomes translucent and releases a sweet aroma. It’s important to stir occasionally to prevent burning.

Once the onion is translucent, add the diced potato (if using), celery, broccoli, carrot, and cabbage to the pot. (The blanched tomatoes will be added later.)

Pour in the remaining 900ml of water and add the 2 chicken stock cubes. (This brings the total liquid to 1000ml, including the initial 100ml used for sautéing the onion.)

Give all the ingredients a gentle stir with a spatula, then cover the pot with a lid. Let it simmer over medium-low heat for about 20 minutes, allowing the vegetables to soften completely and their flavors to meld.

Once the vegetables are tender, add the diced tomatoes to the pot.

Continue to simmer for another 10 minutes, or until the tomatoes have softened and started to break down. This process will release their vibrant color into the soup.

As the tomatoes cook and begin to dissolve, you’ll notice the beautiful, characteristic red hue of the Witch’s Soup starting to infuse the entire broth.

The seasoning for the Witch’s Soup is adjusted with curry powder. I found that 2 tablespoons provided a perfectly savory and flavorful result, but feel free to adjust to your taste.
