Ingredients- 1/2 bunch fresh spinach
- 1 handful dried shrimp (about 10-15g)
- 15 clams, fresh
- 5 cups water (approx. 900ml)
- 5 dried anchovies for broth
- 1 sheet dried kelp (about 5x5cm)
- 1.5 tablespoons miso paste
- 0.5 tablespoon red pepper paste (gochujang)
- 0.3 tablespoon minced garlic
Cooking Instructions
Step 1
First, wash the spinach thoroughly under running water. Trim off any wilted or yellow leaves, and pay special attention to the root ends, as they can retain soil. Gently trim away the tough bottom parts of the stems.
Step 2
In a pot, pour in 5 cups of water. Add the kelp sheet and 5 dried anchovies for broth. It’s best to simmer over medium heat rather than high heat to extract the best flavors from the kelp and anchovies without making the broth cloudy.
Step 3
Once the water comes to a rolling boil, remove the kelp sheet after about 1 minute. Boiling kelp for too long can result in a bitter taste. Continue to simmer for another 1-2 minutes, then remove the anchovies to ensure a clear broth.
Step 4
To the clean anchovy-kelp broth, add 1.5 tablespoons of miso paste and 0.5 tablespoon of gochujang. Stir well until the pastes are dissolved and fully incorporated into the broth, ensuring there are no lumps. Add the prepared spinach to the seasoned broth.
Step 5
Now, add 1 handful of dried shrimp for added umami, 15 fresh clams (ensure they have been purged of sand), and 0.3 tablespoon of minced garlic. The dried shrimp will contribute a savory depth, while the clams will add a natural, sweet seafood broth.
Step 6
After adding all the ingredients, wait for the soup to come back to a boil. Once it’s bubbling nicely, taste the soup and adjust the seasoning with salt if needed. Once seasoned to your liking, turn off the heat and enjoy your delicious spinach miso soup immediately.
