However, for longer storage, it’s advisable to boil the marinade, let it cool completely, and then pour it over the eggs. This prevents the soft-boiled eggs from overcooking and becoming hard-boiled. Marinated Egg Ingredients

  • 9-10 eggs
  • 1 Korean chili pepper (cheongyang pepper), thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1/4 yellow bell pepper, thinly sliced
  • 4-5 cloves garlic, thinly sliced
  • 4-5 cm of the white part of a scallion, thinly sliced
  • 100ml soy sauce
  • 100ml kelp broth (or water)
  • 3 Tbsp sugar
  • 3 Tbsp corn syrup (or oligodang)
  • 2 Tbsp rice wine (cheongju)

For Soft-Boiling the Eggs

  • 500ml water
  • 1 Tbsp salt
  • 1 Tbsp vinegar

For Pre-Seasoning the Eggs (Gam-dong Lan Method)

  • 900ml water (enough to cover the eggs)
  • 2 Tbsp salt
  • 1 Tbsp seasoned salt (or 3 Tbsp regular salt if unavailable)

Cooking Instructions

In a pot, combine 500ml of water, 1 Tbsp of salt, and 1 Tbsp of vinegar. Bring the water to a boil. Once boiling, carefully add the eggs and cook for 7-8 minutes to achieve a perfect soft-boiled consistency.

Immediately transfer the boiled eggs to a bowl of cold water. This rapid cooling helps to set the eggs and makes peeling much easier.

In an airtight container, combine 900ml of water with 2 Tbsp of salt and 1 Tbsp of seasoned salt (or 3 Tbsp of regular salt). Stir well until the salt is completely dissolved. Place the cooled, peeled eggs into this salt brine.
