  • 180g onion (about 1 medium)
  • 100g carrot (about 1/2 medium)
  • 150g cherry tomatoes (about 10-15)
  • 40g curry powder/flakes (about 1/2 block)
  • 1 stalk green onion

Seasoning Mix

  • 2 Tbsp minced garlic
  • 1 tsp grated ginger
  • 1 Tbsp soy sauce
  • 1 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp oyster sauce
  • 1 Tbsp sesame oil
  • 2 Tbsp cooking wine (e.g., Mirin)
  • 2 Tbsp plum extract (Maesil Cheong)
  • 2 Tbsp oligodang (corn syrup or rice syrup)
  • A pinch of black pepper

Cooking Instructions

Step 1

First, rinse the chicken pieces for Dakbokkeumtang thoroughly under cold running water to remove any impurities. Place the cleaned chicken in a bowl. Add all the seasoning ingredients for the marinade: 1 Tbsp soy sauce, 1 Tbsp gochujang, 1 Tbsp oyster sauce, 1 Tbsp sesame oil, 2 Tbsp cooking wine, 2 Tbsp minced garlic, 1 tsp grated ginger, a pinch of black pepper, 2 Tbsp plum extract, and 2 Tbsp oligodang. Mix everything well.

Step 1

Step 2

Gently massage the marinade into the chicken with your hands to ensure it’s evenly coated. Let it marinate for 10 minutes. This step helps the chicken absorb the flavors, leading to a richer taste.

Step 2

Step 3

Peel the potatoes and cut them into bite-sized pieces, suitable for braising with the chicken. They will become tender and absorb the flavors as they cook.

Step 3

Step 4

Peel the carrot and cut it into similar-sized chunks as the potatoes. The vibrant orange color will add visual appeal to the dish.

Step 4

Step 5

Peel the onion and cut it into large, bite-sized pieces that will integrate well into the Dakbokkeumtang.

Step 5

Step 6

Wash the cherry tomatoes under running water, gently rubbing each one to ensure they are clean. This preserves their fresh, bright flavor.

Step 6

Step 7

Remove the stems from the washed cherry tomatoes and cut them in half. Halving them allows their juices to release into the broth, enhancing the overall flavor. Be careful not to cut them too small, as they might break apart too much during cooking.

Step 7

Step 8

Now, let’s cook the Dakbokkeumtang. Place the marinated chicken and 200ml of water in a pot. Cover with a lid and bring to a boil over high heat. Once it starts boiling vigorously, reduce the heat to medium and let it simmer for 10 minutes.

Step 8

Step 9

After the chicken has simmered for 10 minutes, add the potatoes and carrots. Continue to cook for another 5 minutes. The vegetables will start to soften and absorb the delicious broth.

Step 9

Step 10

As the broth reduces and the vegetables begin to soften, add the halved cherry tomatoes to the pot. As they cook, their tartness will infuse the broth, adding a delightful layer of flavor.

Step 10

Step 11

Finally, add the chopped green onions and onions to the pot. It’s best not to overcook the vegetables at this stage; aim for them to be tender-crisp.

Step 11

Step 12

We’ll dissolve the curry cubes in hot water for a smooth consistency. In a separate small bowl, place the 40g of curry (about half a block) and pour in a little hot water.

Step 12

Step 13

Stir the curry with chopsticks or a small whisk until it’s completely dissolved and lump-free. This ensures the curry blends seamlessly into the Dakbokkeumtang, thickening the sauce and adding its signature aroma.

Step 13

Step 14

Pour the dissolved curry mixture into the Dakbokkeumtang pot. Gently stir with a wooden spoon to combine all the ingredients without mashing them. Let it simmer for an additional 5 minutes to allow the curry flavor to fully meld with the broth.

Step 14

Step 15

Your delicious Tomato Curry Dakbokkeumtang is ready! The glossy chicken and vegetables, along with the appetizing broth, look incredibly inviting.

Step 15

Step 16

The addition of curry prevents the typical greasiness often found in Dakbokkeumtang, resulting in a wonderfully clean finish. The sweet and sour cherry tomatoes not only complement the chicken but also effectively remove any gamey odors and mask any potential richness, making this dish exceptionally palatable. It’s an excellent choice for a nourishing meal, especially during hot days when you need to replenish your energy. Whether you mix it with rice or simply enjoy the flavorful broth, it’s truly delicious!
