  • Leftover cooked chicken (meat only, bones and tough skin removed)
  • 1/2 medium onion
  • 1/3 medium carrot
  • 1 medium tomato
  • 1 handful baby greens
  • Salt, to taste
  • Black pepper, to taste
  • Vegetable oil or olive oil

Cooking Instructions

First, prepare your ingredients. Carefully remove any bones and tough skin from the leftover chicken, then dice the meat into bite-sized pieces. Dice the onion, carrot, and tomato into similar small, uniform sizes. Having all your ingredients prepped before you start cooking will make the process much smoother.

Heat a tablespoon or two of vegetable oil in a large skillet or wok over medium heat. Add the diced onion and sauté until it becomes translucent, about 2-3 minutes. Then, add the diced chicken and stir-fry until it’s lightly golden. Next, add the diced tomato and cook for another minute until it softens slightly. Finally, add the diced carrot and stir-fry for 1-2 minutes more, ensuring the vegetables remain slightly crisp. Season lightly with salt and pepper as you go to build flavor.

Once the vegetables and chicken are well-combined and sautéed, add your cooked rice to the skillet. Use a spatula to break up any clumps of rice and stir-fry vigorously, mixing everything together. Continue to stir-fry for several minutes until the rice is heated through and slightly toasted. Taste and season with salt as needed for the final flavor. For extra richness, you can stir in a drizzle of sesame oil and a sprinkle of toasted sesame seeds. Alternatively, a dash of soy sauce or oyster sauce can add a wonderful umami depth.
