  • Carrot 1/4 (approx. 30g)
  • Scallion or White part of Leek 1/4 handful (approx. 20g)
  • 1 Egg
  • Enoki Mushrooms 1/4 handful (approx. 30g)

  • Salt, a pinch

Cooking Instructions

Step 1

First, prepare the vegetables. Peel the carrot and finely julienne it. Finely chop the scallion or the white parts of the leek. Trim the base of the enoki mushrooms and separate them into strands. Place the prepared carrots, scallions, and enoki mushrooms in a bowl with the ground pork.

Crack 1 egg into the bowl with the vegetables and pork. Sprinkle in a pinch of salt. Now, use your hands to mix and knead everything together thoroughly. Kneading until the mixture becomes slightly sticky is crucial to prevent the meatballs from falling apart and ensure they cook beautifully.

Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Scoop out portions of the mixture with a spoon and shape them into small, round patties or your desired size, then place them in the hot pan. Be mindful of the heat; cooking on high heat can burn the outside before the inside is cooked through.

Once one side is golden brown, gently press down with a spatula to help maintain the shape, and carefully flip the patties. Cook for about 3-4 minutes on each side until they are evenly golden brown and cooked through. Ensuring the inside is fully cooked is important.
