Ingredients

  • 100g Almond Flour
  • 100g Oat Flour
  • 100g Unsalted Butter, softened at room temperature for at least 3 hours
  • 3 Eggs, at room temperature
  • 70g Sugar (granulated or brown)
  • 1 Apple, fresh
  • 3g Ground Ginger
  • 5g Ground Cinnamon
  • Lemon zest or a few drops of lemon oil for freshness
  • 1g Salt

Cooking Instructions

Step 1

Ensure your butter is properly softened by leaving it at room temperature for at least 3 hours until it’s pliable. In a large mixing bowl, combine the softened butter, room-temperature eggs, almond flour, oat flour, sugar, ground ginger, ground cinnamon, lemon zest (or oil), and salt. For a smoother cake texture, consider sifting the dry ingredients before adding them to the bowl.

Step 1

Step 2

Using a hand mixer, beat the ingredients together until a smooth, creamy batter forms. Make sure to scrape down the sides of the bowl periodically to ensure everything is evenly incorporated and to avoid any lumps.

Step 2

Step 3

Wash the apple thoroughly, then peel it. Slice the apple thinly, aiming for a thickness of about 0.5 cm. Thin slices will bake more evenly and integrate beautifully into the cake.

Step 3

Step 4

Grease your cake pan with a thin layer of softened butter, then lightly dust it with flour (since this is a flourless cake, you can use rice flour or almond flour for dusting). This step helps prevent the cake from sticking. If you’re using a well-seasoned non-stick pan, you might be able to skip this step.

Step 4

Step 5

Pour the cake batter into the prepared pan and spread it evenly. Arrange the thinly sliced apples on top of the batter, creating a decorative pattern. You can overlap the slices or arrange them in any design you like to enhance the cake’s appearance.

Step 5

Step 6

Bake in a preheated oven at 180°C (350°F) for approximately 30 to 40 minutes. To check for doneness, insert a skewer or toothpick into the center of the cake; it should come out clean with no wet batter. Baking times can vary depending on your oven. Once baked, let the cake cool in the pan for about 5-10 minutes before attempting to remove it, allowing it to set properly.
