When you’re tired of everyday meals and your appetite is waning, a hearty one-bowl meal is the best! I’ve made a rice bowl by mixing ground chicken with vegetables I had at home.

One-Bowl Meal | Chicken Rice Bowl Ingredients

  • 1 bowl of cooked rice
  • 200g ground chicken
  • 1 eggplant
  • 1/2 cucumber
  • 1/2 onion
  • 2 eggs
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon oligo당 (oligodang syrup)
  • Minced garlic, to taste
  • Pinch of black pepper
  • Pinch of salt
  • 1 teaspoon sesame oil
  • A sprinkle of toasted sesame seeds

Cooking Instructions

Step 1

First, prepare the vegetables for your rice bowl. Wash the onion, eggplant, and cucumber thoroughly, pat them dry, and then julienne them into thin strips. Cutting the vegetables thinly will ensure a tender texture and harmonious blend when stir-fried.

Heat a pan over medium heat. Add the ground chicken and stir-fry. Break up any clumps of chicken as it cooks. Add minced garlic and a pinch of black pepper to remove any gaminess and enhance the flavor.

Once the chicken is partially cooked, add 1 tablespoon of gochujang and 1 tablespoon of oligo당. Continue to stir-fry everything together for about 2-3 minutes, allowing the flavors to meld and the chicken to become coated in the delicious sauce.

In a separate pan, heat a little cooking oil. Add the julienned onion, eggplant, and cucumber. Sprinkle a pinch of salt over the vegetables as they cook; this helps them soften quickly and absorb seasoning. Be careful not to overcook them, so their crisp texture is preserved.

Crack the 2 eggs into a bowl. Add a tiny pinch of salt and whisk them together thoroughly. Be mindful not to add too much salt at this stage, as it can make the dish too salty.

Lightly oil a pan and pour in the beaten eggs. Scramble the eggs until they are cooked and form soft curds. Use chopsticks or a spatula to gently break them apart as they cook.

Now, it’s time to assemble your rice bowl. Place a bowl of warm cooked rice in the serving bowl. Spoon half (1/2) of the cooked chicken mixture over the rice. Arrange the stir-fried vegetables and the scrambled eggs around the chicken, creating an appealing presentation. Thinking about the color balance will make it even more appetizing.

Top the center of the bowl with the remaining half (1/2) of the chicken mixture. Finish by sprinkling a generous amount of toasted sesame seeds over the top.
