Stir-Fried Garlic Scapes with Soy Sauce
Simple and Delicious Garlic Scapes Stir-Fry Recipe (Perfect Side Dish!)

Introducing a flavorful stir-fried garlic scape recipe. While adding anchovies or dried shrimp is also delicious, this recipe focuses on bringing out the natural taste of garlic scapes by gently simmering them in a savory soy sauce-based seasoning. This garlic scape stir-fry is made by adding just the garlic scapes and a simple soy sauce marinade. It’s perfect for a quick and easy side dish that will make you want to finish your rice! Garlic Scapes Stir-Fry Ingredients- 155g fresh garlic scapes
- 0.5 Tbsp soy sauce
- 0.4 Tbsp brown sugar
- 0.15 Tbsp salt
- 3 Tbsp grapeseed oil
- 0.5 Tbsp sesame oil
- A sprinkle of toasted sesame seeds
Blanching Garlic Scapes- 600ml water
- 0.4 Tbsp coarse salt
- 600ml water
- 0.4 Tbsp coarse salt
Cooking Instructions
Step 1
First, prepare the garlic scapes for a delicious stir-fry.

Step 2
Trim off the very ends of the garlic scapes and cut them into approximately 4cm (1.5 inch) lengths. The flower buds at the tips are nutritious, so try to cut above them. Discard any discolored or spoiled parts.

Step 3
Fill a bowl with enough water to cover the garlic scapes. Gently agitate the scapes with your hands, changing the water about 3 times to wash them thoroughly. Drain them well in a colander.

Step 4
In a pot, combine 600ml of water and 0.4 Tbsp of coarse salt. Bring to a boil over high heat.

Step 5
Once the water is boiling vigorously, add the prepared garlic scapes and stir gently.

Step 6
As the water re-boils and the garlic scapes float to the surface, turn off the heat immediately. Overcooking will make them mushy.

Step 7
Pour the blanched garlic scapes into a colander. Then, plunge them into cold water and agitate them with your hands to quickly cool them down. This step helps maintain their crispness. Once cooled, drain thoroughly and pat dry.

Step 8
Heat a stir-fry pan over medium heat. Add the drained garlic scapes and 3 Tbsp of grapeseed oil. Stir-fry for about 1 minute to coat the scapes with oil. This helps them absorb the seasonings better and adds a nice flavor.

Step 9
Add 0.5 Tbsp of soy sauce to the pan. This forms the base of our savory seasoning.

Step 10
Add 0.4 Tbsp of brown sugar for a touch of sweetness. You can adjust the amount to your preference.

Add 0.15 Tbsp of salt to season. It’s best to start with a small amount and adjust later.

Continue stir-frying over medium heat for about 3 minutes, ensuring the garlic scapes are evenly coated with the sauce. Stir occasionally to prevent sticking and burning. Once done, turn off the heat.

Step 13
After turning off the heat, taste the stir-fried garlic scapes. If it’s not salty enough, add a little more salt. If it’s not sweet enough, add a bit more sugar until it reaches your desired taste.

Step 14
Finally, add 0.5 Tbsp of sesame oil and stir gently to combine. This adds a wonderful nutty aroma.

Step 15
