  • 1 Tbsp mayonnaise (for a smooth texture)

First, prepare the squid and broccoli for the salad by cleaning them thoroughly. Fresh ingredients are the beginning of a delicious salad.

Wash the broccoli carefully under running water. Trim off the tough bottom part of the stem and break the florets into bite-sized pieces. This helps the dressing coat them evenly and makes them easier to eat.

Fill a pot with plenty of water and bring it to a boil. Once boiling, add 1/3 Tbsp of salt and the prepared broccoli florets. Blanch them for about 1 minute and 30 seconds. Be careful not to overcook, as they can become mushy. Immediately rinse the blanched broccoli under cold water to stop the cooking and then soak them in cold water for a bit to ensure a crisp texture.

Now, let’s prepare the squid. Clean the squid by removing the skin. Separate the tentacles and prepare them. For the body, you can make a single lengthwise slit along the skin at one end, which makes peeling easier.

Bring another pot of water to a boil. Once it’s boiling, add 1 Tbsp of Cheongju (rice wine) and the cleaned squid. Squid can become tough if overcooked, so boil it for only about 1 minute after the water returns to a boil. Drain the cooked squid and let it cool slightly in a colander.
