Basic Ingredients

  • 250g White Bean Paste (store-bought)
  • 30g Almond Flour
  • 1 Fresh Egg Yolk
  • 1 Tbsp Milk (15ml)

First, place 250g of store-bought white bean paste in a bowl and gently loosen it. Add 1 egg yolk and mix well to ensure there are no lumps in the paste. Finally, sift in 30g of almond flour and mix thoroughly until a smooth dough is formed. Add 1 tablespoon of milk and knead until the mixture comes together into a cohesive ball. If the dough is too sticky, add a tiny bit more bean paste or almond flour; if too dry, add a little more milk or flour until you achieve a workable consistency.

Now it’s time to transfer the prepared dough into a piping bag. Fit the piping bag with a star tip and carefully push the dough in, ensuring no air pockets. You can snip off the tip of the piping bag slightly to securely attach the tip.

Line a baking sheet with parchment paper. Pipe the dough from the piping bag onto the prepared sheet, creating your desired cookie shapes. Make sure to leave enough space between each cookie so they don’t touch while baking. You can pipe them into the traditional elongated ‘Sangtu’ shape or into round cookies. Piping them into uniform sizes will ensure even baking.

Place the baking sheet into an oven preheated to 180°C (350°F) and bake for approximately 17 minutes. They are done when the edges are lightly golden brown and the cookies feel firm and slightly crisp. Baking time and temperature may vary depending on your oven’s specifications, so keep an eye on them and adjust as needed. Be careful not to overbake, as they can burn easily.
