To commemorate my mother-in-law’s memorial day, I made these delightful ham and scallion skewers, a favorite of my nieces and nephews. Following the methods my dear mother-in-law used, I found this recipe to be incredibly easy and simple to prepare. The combination of savory ham, tender imitation crab, and aromatic scallions makes for a truly delicious treat.

Ingredients

  • Gimbap ham (thinly sliced ham) 1 pack
  • Imitation crab sticks 3-4 pieces
  • Scallions about 10-15 stalks
  • All-purpose flour 3-4 Tbsp
  • Eggs 2 large
  • Canola oil (or vegetable oil) for frying
  • Salt to taste

Cooking Instructions

First, separate the slices of gimbap ham. If the imitation crab sticks are long, cut them in half crosswise so they are a suitable size for skewers. Preparing the ingredients in advance will significantly speed up your cooking time.

Thoroughly wash the scallions under running water, ensuring no dirt or debris remains. If the green parts are too long and might make the skewers unwieldy, you can trim them slightly. After washing, pat them dry with paper towels to remove excess moisture. This step is crucial for preventing oil splatters and ensuring the skewers cook up crispy.

Now, let’s assemble the skewers. A common and visually appealing order is ham, followed by scallions, and then imitation crab. This arrangement helps the ingredients stay together and creates a balanced bite.

To ensure the skewers remain intact while cooking, it’s a good idea to reinforce them. Insert a second skewer into the middle of the assembled ingredients. This helps to secure everything tightly and prevents the ham, scallions, and crab from falling apart during frying.

Prepare the batter by first lightly coating one side of the skewered ingredients with all-purpose flour. Dusting only one side helps the egg batter adhere better and prevents the coating from becoming too thick, leading to a lighter texture.

In a bowl, whisk the eggs with a pinch of salt until well combined to create an egg wash. Dip the flour-dusted skewers into the egg wash, ensuring an even, thin coating. A thin layer of egg batter is key for a crispy finish; too much can make the skewers soggy.

Heat a frying pan over medium heat and add a generous amount of canola oil. Once the oil is shimmering hot, carefully place the egg-coated skewers into the pan. Make sure the oil isn’t too hot (which will burn the outside before the inside is cooked) or too cool (which will make them greasy).

Fry the skewers, turning them occasionally, until golden brown and crispy on all sides. This process ensures that the ham is heated through, the crab is tender, and the scallions are nicely cooked. Add more oil if needed to maintain an even fry.
