- 1.5 Tbsp Ketchup
- 60g Water
- 1 handful Baby King Oyster Mushrooms
- 1/2 Onion
- 20g Butter
- 2 tsp Soy Sauce
- 1.5 Tbsp Sugar
- 1.5 Tbsp Ketchup
- 60g Water
Cooking Instructions
Step 1
First, prepare the onion and lotus root for the hamburg steak by washing them thoroughly and then finely mincing them. Set aside a few thin slices of lotus root for grilling later.
Step 2
Heat a lightly oiled pan over medium heat. Add the minced onion and minced lotus root. Season with a pinch of salt and sauté until the onion is translucent and the lotus root is lightly browned. Once cooked, remove from the pan and let it cool.
Step 3
In a mixing bowl, combine the 170g of ground pork with the cooled sautéed onion and lotus root mixture. Add 2 Tbsp of breadcrumbs, 2 tsp of soy sauce, 0.5 Tbsp of ketchup, half an egg, and a pinch of pepper.
Step 4
Mix all the ingredients thoroughly, kneading the mixture with your hands until it becomes sticky and cohesive. This kneading process is crucial to ensure the hamburg steak holds its shape and doesn’t fall apart during cooking.
Step 5
Divide the mixture into two equal portions and shape them into round, flat patties. Remember that the patties will puff up as they cook, so make them slightly flatter than your desired final size.
Step 6
Preheat a pan with cooking oil over medium-low heat. Carefully place the shaped hamburg steak patties into the hot pan and sear them until they are golden brown on both sides.
Step 7
Once the exterior of the patties is nicely browned, reduce the heat to low. Pour in 1/3 cup of water and immediately cover the pan with a lid. Steaming the patties this way helps ensure they cook evenly and remain moist on the inside.
Step 8
Now, let’s make the special sauce to enhance the hamburg steak! Thinly slice the onion and cut the baby king oyster mushrooms into bite-sized pieces. (You can substitute with regular oyster mushrooms if preferred.)
Step 9
Using the same pan where you cooked the hamburg steaks (after wiping out any excess grease), add 20g of butter and melt it over medium-low heat.
Step 10
Add the sliced onions to the melted butter and sauté until they become translucent and fragrant.
Step 11
Toss in the sliced mushrooms and cook for a minute until they soften slightly. Then, add 2 tsp of soy sauce, 1.5 Tbsp of sugar, 1.5 Tbsp of ketchup, and 60g of water. Increase the heat to high and stir continuously as the sauce simmers and thickens.
Step 12
Once the sauce reaches your desired consistency, remove it from the heat. Keep in mind that the sauce will thicken further as it cools, so it’s best to turn off the heat when it seems slightly thinner than you want.
Step 13
Take the lotus root slices that you set aside earlier. Pat them dry and pan-fry them in a little oil until they are golden brown and crispy.
Step 14
Arrange the cooked lotus root hamburg steak patties on a serving plate. Artfully place the crispy fried lotus root slices alongside the patties.
Step 15
Finally, generously spoon the warm, homemade sauce over the hamburg steak. Your delicious Lotus Root Hamburg Steak is now ready to be enjoyed!
