  • 50g cake flour (low-gluten flour)
  • 20g whole wheat flour
  • 20g cornstarch (or potato starch)
  • 10g granulated sugar
  • 4-5g herb salt
  • 1 Tbsp olive oil (15ml)
  • 3 Tbsp milk (45ml)

First, preheat your oven to 180℃ (350℉) for about 10 minutes. A properly preheated oven ensures your crackers bake evenly and achieve a perfect crisp.

In a mixing bowl, sift together the cake flour, whole wheat flour, and cornstarch. Add the granulated sugar and herb salt. Pour in the olive oil (1 Tbsp / 15ml) and milk (3 Tbsp / 45ml). Using a chopstick or fork, gently mix the ingredients in a swirling motion (like drawing 11s or #s) until the dough just starts to come together. Be careful not to overmix, as this can make the crackers tough.

Gather the dough into a ball and place it on a lightly floured work surface. Use a rolling pin to flatten the dough to an even thickness of about 0.3-0.5 cm (approximately 1/8 to 3/16 inch). Cut the dough into your desired shapes, such as thin sticks. Arrange the cut dough pieces on a baking sheet lined with parchment paper, ensuring there’s a little space between each piece so they don’t stick together during baking.

Place the baking sheet into the preheated oven and bake at 180℃ (350℉) for about 15 minutes, or until the edges are lightly golden brown and the crackers are firm. Once baked, carefully remove the crackers from the oven and transfer them to a wire rack to cool completely. They will crisp up further as they cool. Handle them gently while warm, as they can be fragile.
