Introducing a super simple soy sauce tteokbokki recipe perfect for satisfying the constant hunger of growing kids! I quickly whipped up a late-night snack using rice cakes and fish cakes from my freezer. This delicious soy sauce tteokbokki is ready in just 10 minutes and guaranteed to be a hit! Its wonderfully sweet and savory flavor profile makes it ideal for children. It’s incredibly easy and fast to make, perfect for a quick snack or when you’re craving something tasty.

Ingredients

  • Tteokbokki rice cakes, 1 serving (approx. 150-200g)
  • Square fish cake, 1 sheet (large)
  • Regular soy sauce, 0.5 Tbsp (for flavor and color)
  • Soup soy sauce, 0.5 Tbsp (for a touch of umami)
  • Sugar, 1 Tbsp (for that kid-approved sweetness)
  • Anchovy-kelp broth, 2 cups (or rice water, plain water)
  • Minced garlic, 1 tsp (for added aroma)
  • Green onion, a small amount (sliced)
  • Black pepper, a pinch (optional)
  • Sesame oil, a drizzle (for a finishing nutty aroma)

Cooking Instructions

It’s convenient to have anchovy-kelp broth pre-made and stored in the refrigerator. Simply boil dried anchovies and kelp in water for about 10 minutes to create a flavorful broth.

Pour 2 cups of the prepared broth into a pot. Add the tteokbokki rice cakes and the square fish cake, cut into bite-sized pieces. Then, add 0.5 Tbsp of regular soy sauce, 0.5 Tbsp of soup soy sauce, and 1 Tbsp of sugar. Bring to a boil over high heat.

Reduce the heat to medium and simmer until the rice cakes are soft and chewy and the fish cakes have absorbed the flavors. Once the rice cakes are tender, stir in 1 tsp of minced garlic. Add a pinch of black pepper here as well for extra depth of flavor.

Wash and thinly slice the green onion. When the tteokbokki is almost done, add a generous amount of the sliced green onion for a refreshing taste and aroma.

Continue to simmer over medium-low heat until the sauce thickens to your desired consistency. Once the sauce has reduced, turn off the heat and finish with a drizzle of sesame oil for a rich, nutty aroma. Your delicious soy sauce tteokbokki is ready!
