Hello everyone, I’m Rui, a Naver Food influencer! ^^ My kimchi from last year’s kimchi-making has become perfectly sour, and my eldest son wanted some tuna and kimchi stir-fry, so I made this side dish after a long time. It’s a staple that’s both comforting and delicious!

Main Ingredients

  • 1/2 head of well-fermented kimchi
  • 1 can of tuna (approx. 150g)
  • 1/2 medium onion
  • 1/3 carrot
  • 1/2 green onion

Seasoning

  • Cooking oil, as needed
  • 6 Tbsp water
  • 3 Tbsp soy sauce
  • 1 Tbsp minced garlic
  • 4 Tbsp plum extract or corn syrup (adjust sweetness)
  • 2-3 Tbsp sesame oil
  • Pinch of black pepper
  • Plenty of toasted sesame seeds

Cooking Instructions

The first step to a delicious stir-fry! If your kimchi is very sour, you can lightly rinse it under water and gently shake off some of the seasoning. Then, cut it into bite-sized pieces, or slightly smaller, or into strips, making it easy for everyone to eat. (Depending on the sourness of your kimchi, you can skip rinsing or adjust the amount of water used.)

Prepare the vegetables and tuna. Finely mince the green onion, separating the white and green parts. Peel and thinly julienne the carrot and onion for a pleasant texture when stir-fried. Drain the tuna from the can, and a quick rinse under hot water can help reduce any fishy smell. Squeeze out any excess water.

Now, let’s make some flavorful green onion oil. Heat a pan over medium-low heat, add cooking oil, and sauté the minced green onion until fragrant and lightly golden, being careful not to burn it. This will create a delicious base for your stir-fry.

Once the green onion oil is fragrant, add the prepared kimchi to the pan along with 6 tablespoons of water. Stir-fry the kimchi over medium heat until it absorbs the green onion oil flavor. Continue cooking until the kimchi becomes slightly translucent.

It’s time to add the tuna and vegetables. Add the drained tuna, julienned onion, and julienned carrot to the pan and mix them well with the kimchi.

Now let’s season everything! Add 3 tablespoons of soy sauce, 1 tablespoon of minced garlic, and 4 tablespoons of plum extract (or corn syrup) for sweetness and shine. If making this for children, you can also add a little sugar.

Stir-fry everything evenly until all ingredients and seasonings are well combined. It’s important to cook until the kimchi softens and the vegetables release their natural sweetness, creating a balanced flavor profile.

Almost done! Once the onions are tender and the kimchi is nicely stir-fried, you’re nearly there. Just before turning off the heat, drizzle in 2-3 tablespoons of sesame oil and sprinkle in some black pepper for extra aroma. Finally, scatter a generous amount of toasted sesame seeds for a nutty finish. Your delicious tuna and kimchi stir-fry is ready!
