Homemade Nougat Crackers: A Perfect Blend of Crispy and Chewy Sweetness
Easy Nougat Cracker Recipe using Ritz Crackers | Dessert at 4 p.m.

Ingredients- Ritz Crackers 60 pcs
- Unsalted Butter, melted, 30g
- Salt 2g
- Finely chopped spring onion 10g
- Water 35ml
- Granulated sugar 60g
- Corn syrup (or glucose syrup) 90g
- Egg white 1 large
- Granulated sugar for egg white 5g
Cooking Instructions
Step 1
First, melt the 30g of butter by microwaving it for about 30 seconds until it becomes a liquid. Make sure it’s not too hot to handle.
Step 2
In a small bowl, combine the melted butter with 2g of salt and 10g of finely chopped spring onion. Mix well until everything is evenly incorporated to create your flavored butter base.
Step 3
Arrange the Ritz crackers in a single layer on a baking sheet or tray. Using a spoon or a brush, spread the prepared scallion butter evenly over the top of each cracker. This step adds a wonderful savory note!
Step 4
Preheat your oven to 170°C (340°F). Bake the buttered crackers for approximately 3 minutes, or until they are lightly golden and fragrant. Oven temperatures can vary, so keep a close eye on them to prevent burning and adjust the time or temperature as needed. Once done, remove them from the oven and let them cool.
Step 5
In a saucepan, combine 35ml of water, 60g of granulated sugar, and 90g of corn syrup. Cook over medium heat without stirring until it forms a syrup, which should take about 17-20 minutes. If you have a candy thermometer, cook it to 120-130°C (250-265°F).
Step 6
About 14-15 minutes into cooking the syrup (around 110°C / 230°F), in a clean bowl, whisk the egg white with the 5g of granulated sugar. Continue whisking until you achieve stiff peaks that hold their shape but have a slight bend at the tip (around 80-90% meringue stage).
Step 7
Once the syrup reaches the desired temperature, slowly and carefully pour it in a thin stream into the meringue while continuously whisking with an electric mixer or a whisk. Continue whisking until the nougat mixture becomes very thick and stiff, pulling away from the sides of the bowl. This indicates a well-made nougat. It should be quite firm to the touch (slightly thicker than what might appear in videos is often better for assembly).
Step 8
Finally, scoop spoonfuls of the warm nougat mixture and place them between two cooled, baked crackers to form sandwiches. Gently press to shape. Your delicious homemade nougat crackers are now ready to be enjoyed!
