On a busy evening after work when dinner plans were absent, I picked up an ‘Easy Home Cooking’ meal kit for spicy soft tofu stew with seafood.

Cooking Instructions

The ingredients in the meal kit are freshly and individually packaged, ensuring quality. The included vegetables can be quickly rinsed under running water and are ready to use. The instructions are simple yet detailed, making it very easy to follow, even for novice cooks. Meal kits simplify cooking and allow for quick preparation. This dish is a variation of spicy soft tofu stew enhanced with added seafood for a richer flavor.

The seafood mix contains ingredients like squid, shrimp, and mussels. Rinse them under cool running water 2-3 times. The squid is nicely scored and, being quite large, I cut it into bite-sized pieces.

The set includes vegetables such as onion, green onion, oyster mushrooms, king oyster mushrooms, zucchini, and chili peppers. Wash these vegetables thoroughly under running water as well. Feel free to add any other ingredients you have on hand to make the stew even more substantial. I found some fish cakes in my refrigerator and decided to add them for extra texture and flavor.

Following the meal kit’s instructions, pour 540ml of water (about 3 standard Korean paper cups) into a pot and add the spicy soft tofu stew sauce. Bring it to a boil. The recipe specifies the amount of water, but if you prefer a brothier stew, you can add a little more water.

Once the water is boiling vigorously, add the rinsed vegetables, seafood mix, and the soft tofu. For the soft tofu, use a spoon to scoop out large chunks directly into the pot, which helps maintain its delicate texture. When all ingredients are cooked through, crack an egg into the stew just before serving to add richness and complete the dish.
