Main Ingredients- 160g beef brisket slices
- 230g bean sprouts
- 1 red chili pepper (approx. 18g)
- 20g scallions
- 1 Tbsp minced garlic
- 1 Tbsp cooking oil
Seasoning Ingredients- 1.5 Tbsp oyster sauce
- 1 Tbsp soy sauce
- 1-2 pinches salt
- Pinch of black pepper
- Sesame seeds for garnish
- 1.5 Tbsp oyster sauce
- 1 Tbsp soy sauce
- 1-2 pinches salt
- Pinch of black pepper
- Sesame seeds for garnish
Cooking Instructions
Step 1
First, place the bean sprouts in a bowl and fill it with enough water to cover them. Gently swirl the bean sprouts with your hands to loosen any dirt, changing the water about 3-4 times. Be careful not to break the sprouts while washing. Drain them thoroughly in a colander.
Step 2
Wash the red chili pepper and scallions, then thinly slice them. Prepare 1 tablespoon of minced garlic.
Step 3
Heat a large wok or frying pan over medium heat. Add the beef brisket slices, 1 tablespoon of minced garlic, and 1 tablespoon of cooking oil.
Step 4
Once the beef brisket has changed color and is mostly cooked, add 1 tablespoon of soy sauce and 1.5 tablespoons of oyster sauce to the pan. These sauces will enhance the flavor of the beef.
Step 5
Stir-fry the ingredients quickly using a spatula or chopsticks, ensuring the sauce is evenly distributed among the beef brisket. You’ll start to smell the delicious aroma.
Step 6
Now, add the drained bean sprouts to the pan. Stir gently only 2-3 times, just until the bean sprouts begin to wilt slightly. Avoid overcooking, as this will make them lose their crispness!
Step 7
Once the bean sprouts have slightly wilted, add the sliced red chili pepper and scallions. Stir-fry briefly for about 1 minute, or just until the bean sprouts are tender-crisp. Turn off the heat immediately. (Bean sprouts shrink significantly as they cook and release moisture. Overcooking will result in a loss of their refreshing crunch, so stir-fry for a very short time to maintain crispness.)
Step 8
Taste the stir-fry. If it feels a bit bland, add 1-2 pinches of salt. Sprinkle a pinch of black pepper for added aroma, adjusting to your preference.
Step 9
Stir everything together again gently to ensure the salt and pepper are evenly distributed throughout the beef brisket and bean sprouts. This step allows the seasonings to meld perfectly.
Step 10
Finally, sprinkle a generous amount of toasted sesame seeds over the stir-fry. Your delicious beef brisket and bean sprouts stir-fry, a perfect accompaniment to rice, is now ready! Enjoy your meal.
