  • 2 strips of Pollock Roe (shredded lengthwise)
  • 2 Eggs
  • 1/4 Onion (finely chopped)
  • 1/6 Carrot (finely chopped)
  • 1 stalk of Green Onion (chopped)
  • 1 bowl of Warm Cooked Rice (approx. 210g)

Seasoning for Flavor

  • 1 Tbsp Oyster Sauce
  • Pinch of Salt
  • Pinch of Pepper
  • 1 Tbsp Sesame Oil

Cooking Instructions

First, let’s prepare the green onion, which will add aroma to our fried rice. Take one stalk of green onion, wash it thoroughly, and chop it into small pieces, ready to create fragrant scallion oil.

Next, finely dice the vegetables that will add texture and color to the fried rice. Peel and wash 1/4 onion and 1/6 carrot, then chop them into very small pieces. Dicing them finely will ensure they cook down nicely and blend well into the rice.

Prepare two strips of pollock roe. Cut them into three equal parts and then gently shred them lengthwise with your fingers. Shredding it this way adds a pleasant chewy texture, making the fried rice even more enjoyable. (Tip: Shredding them into larger pieces rather than very thin strips will give you a better bite.)

Now, let’s start stir-frying! Heat a pan over medium-low heat and add a generous amount of cooking oil. Add the chopped green onion and stir-fry until fragrant and slightly softened, creating a flavorful scallion oil without burning it. Once the green onion is aromatic, add the diced carrots and onions and stir-fry until the vegetables become translucent.

Once the vegetables are tender and softened, add the shredded pollock roe and stir-fry briefly. When the pollock roe is lightly cooked, push the ingredients to one side of the pan. Crack the two eggs into the empty space and scramble them.

Then, add one bowl of warm cooked rice. Break up any clumps of rice and stir-fry everything together until well combined.
