Cucumber Boat Main Ingredients

  • 1 cucumber
  • 2 Tbsp brown rice or mixed grain rice
  • Pinch of parsley flakes (for garnish)

Creamy Tuna Mayo

  • 1 can tuna (90g)
  • 1 Tbsp mayonnaise
  • 1/2 Tbsp Sriracha sauce
  • 1/2 Tbsp lemon juice
  • Pinch of black pepper

Smooth Egg Mayo

  • 1 hard-boiled egg
  • 1 Tbsp mayonnaise
  • 2/3 Tbsp sugar
  • Pinch of black pepper

Cooking Instructions

Step 1

Wash the cucumber thoroughly, keeping the skin on. Sprinkle a little coarse salt and gently rub the surface to clean it. This helps remove any minor blemishes. Cut the cucumber in half lengthwise, then cut each half lengthwise again to create four long pieces.

Using a small spoon, carefully scoop out the seeds and flesh from the center of each cucumber piece to create a hollow. This forms the space where you’ll add the rice and fillings. Be careful not to scoop too deep.

Open the canned tuna and use a spoon or fork to press down firmly and drain out as much oil as possible. Less oil will make the tuna mayo less greasy and more delicious.

Place the drained tuna into a bowl.

Add 1 tablespoon of mayonnaise, 1/2 tablespoon of Sriracha sauce, and a pinch of black pepper to the tuna.
