Spicy Kimchi Stew with Pork Cutlet (Kimchi Nabe Tonkatsu)

On these chilly days, why not make a hearty and flavorful pork cutlet kimchi stew at home? This dish is perfectly comforting and satisfying as a complete meal, offering a delightful balance of spicy, savory, and rich flavors. It’s an ideal dish to share with loved ones!
Main Ingredients- 2 store-bought pork cutlets (Tonkatsu)
- 1/2 head of well-fermented kimchi
- 1 onion
- 2 fresh eggs
- 1 package of mozzarella cheese
- A portion of green onions
Seasoning & Broth- 1 Tbsp kimchi brine
- 1 cup water (approx. 200ml)
- 1 tsp gochujang (Korean chili paste)
- 1 tsp soup soy sauce
- 1 tsp cooking wine (Mirin)

Cooking Instructions
Step 1
First, finely chop the kimchi into bite-sized pieces. Cutting them into manageable sizes will help them meld better with the broth later.
Step 2
Lightly coat a earthenware pot (ttukbaegi) with olive oil. Add the chopped kimchi and onion, and sauté them until softened. Pour in 1 tablespoon of kimchi brine and 1 cup of water. Season with soup soy sauce to taste. Adding 1 teaspoon of cooking wine (Mirin) will enhance the savory depth of the stew.
Step 3
While the kimchi is simmering, prepare the store-bought pork cutlets. If using an air fryer, cook them at 190°C (375°F) for about 15 minutes, flipping halfway through, until golden brown and crispy. (Deep-frying in oil will result in an even crispier texture.)
Step 4
Once the kimchi in the earthenware pot is simmering nicely, arrange the prepared pork cutlets on top.
Step 5
Pour the beaten eggs gently over the pork cutlets. At this stage, you can also add finely chopped green onions for added aroma. Cover the pot and let it cook until the eggs are set.
Step 6
Once the eggs are mostly cooked, generously sprinkle mozzarella cheese over everything. Cover the pot again and allow the cheese to melt into a gooey, delicious topping.
