Spicy and Numbing Stir-Fried Clams with Mala Sauce

They are affordable compared to other shellfish, and with proper purging, they can transform into a spectacular dish. Following our refreshing clam soup, we’ve created a ‘Mala Clam Stir-Fry’ that captivates with its spicy kick. The exhilarating numbing sensation from the mala sauce combined with the fresh clams creates an irresistible, addictive taste. Enjoy this simple yet special dish!
Ingredients- 500g fresh clams
- 40g minced garlic
- 20g scallions, cut into 5cm lengths
- 15 dried Vietnamese chili peppers
- 1/2 packet of Haos Mala Sauce
Cooking Instructions
Step 1
First, finely mince the garlic. Wash the scallions and cut them into approximately 5cm lengths. If you don’t have scallions, you can substitute with the white parts of a leek. Feel free to adjust the quantity to your preference.
Step 2
Thoroughly purge the clams of any sand or grit, then rinse them under running water several times to remove debris. Bring water to a boil, add the purged clams, and as soon as they start to open, remove them and rinse. (Tip: Even clams purchased online can benefit from an extra purging at home for added peace of mind. Soak them in lightly salted water for 1-2 hours, then rinse.)
Step 3
Heat a pan over medium-low heat, add a generous amount of cooking oil, then add the minced garlic and dried Vietnamese chili peppers. Sauté them gently, being careful not to burn the garlic, until fragrant. The garlic will turn golden brown, and the spicy aroma of the chilies will infuse the oil, adding a delicious depth of flavor.
Step 4
Now, add the prepared clams to the pan along with the Haos Mala Sauce. Stir-fry everything together. The mala sauce will effectively neutralize any potential fishiness from the clams while adding its signature numbing and savory notes. Continue to stir-fry until the clams are fully cooked through, ensuring they are well coated with the sauce.
Step 5
Finally, add the chopped scallions and stir-fry quickly over high heat to finish. The clams will release their natural juices during cooking, so you won’t need to add extra water, resulting in a moist and flavorful stir-fry.
