Fragrant Seasoned Perilla Leaves
Aromatic Perilla Leaves Reminiscent of Mom’s Cooking
While perilla sprouts are commonly used for side dishes, this recipe is perfect for utilizing an abundance of perilla leaves when you have too many! It’s a recipe I particularly cherish. These fragrant leaves, infused with a savory seasoning, are a delightful addition to any meal, especially served with rice.
Ingredients- 2 handfuls of perilla leaves (approx. 20-30 leaves)
- 1 pinch of salt (for blanching)
- 2-3 Tbsp soy sauce (or seasoned soy sauce)
- 1 Tbsp sesame oil
- 2/3 Tbsp minced garlic
- 1 Tbsp dried anchovies (optional, for enhanced umami)
- 80ml water
- A sprinkle of toasted sesame seeds (for garnish)
Cooking Instructions
Step 1
Start by preparing the fragrant perilla leaves. Gently wash them under running water to remove any dirt or debris. Inspect each leaf for any bruised or wilted parts, and trim the stems slightly if desired for a cleaner look.
Step 2
To help the seasoning absorb better, we’ll lightly blanch the perilla leaves. Bring a pot of water to a rolling boil, then add a pinch of salt. Adding salt helps to maintain the vibrant green color of the leaves and reduces any slight bitterness. Carefully submerge the perilla leaves in the boiling water for about 2 minutes. Be careful not to overcook them, as they can become mushy.
Step 3
Immediately after removing the blanched perilla leaves from the hot water, rinse them under cold running water. This ‘shocking’ process helps to retain their bright green color and crisp texture. Gently squeeze out excess water with your hands.
Step 4
Now, chop the blanched perilla leaves into bite-sized pieces, making them easy to mix with the seasoning. You can cut them into quarters or into segments about 2-3 cm long, depending on your preference. Avoid chopping them too finely to prevent them from becoming overly soft when seasoned.
Step 5
Heat 1 Tbsp of sesame oil in a pan over medium-low heat. Add the prepared perilla leaves and sauté them gently for a minute, allowing them to soften slightly before adding the seasoning.
Step 6
Once the perilla leaves begin to soften, add 2/3 Tbsp of minced garlic and 2-3 Tbsp of soy sauce (adjust the amount based on the quantity of leaves and your taste preference). Pour in 80ml of water and stir everything together, cooking for about 1 minute. Cooking with soy sauce will provide a richer umami flavor.
Step 7
Finally, add 1 Tbsp of dried anchovies for an extra layer of savory flavor and a pleasant chew. Anchovies also add protein and calcium to the dish. Mix everything well, then cover the pan and let it simmer on low heat for about 3 minutes.
Step 8
After simmering with the lid on for approximately 3 minutes, your delicious seasoned perilla leaves will be ready! They should be tender, with the seasoning well-absorbed and flavors melded together. Turn off the heat.
Step 9
Transfer the perilla leaves to a serving dish. Sprinkle generously with toasted sesame seeds for a final touch of nutty aroma and flavor. Enjoy this fragrant and savory side dish!
