Hamburger Ingredients- 100g ground beef
- 200g ground pork
- 200g tomato, sliced 0.5cm thick
- 3 morning rolls
- 3 slices cheddar cheese, cut to fit morning rolls
- 2 pickles, sliced 0.5cm thick
- 30g baby greens
- 1 tbsp butter
- 3 tbsp cooking oil
Hamburger Patty Seasoning- 250g onion, finely minced
- 1 egg
- 3 tbsp milk
- 5 tbsp breadcrumbs (for consistency)
- 1 tbsp soy sauce
- 0.5 tsp salt
- 1 tbsp sugar
- 1 tbsp minced garlic
- 1 tbsp chopped cheongyang pepper (omit for kids)
- Pinch of black pepper
- 2 tbsp cooking wine (mirin)
Special Scallion Cream Cheese Sauce- 2 tbsp cream cheese
- 2 tbsp chopped scallions
- 1 tbsp honey
- 0.5 tsp dried basil (or parsley)
- 1 tbsp lemon juice

- 5 tbsp breadcrumbs (for consistency)

Cooking Instructions
Step 1
First, prepare all the fresh ingredients you’ll need for your hamburgers. I’m using baby greens for a nice crunch, but you can substitute with lettuce if you prefer. Thinly sliced cucumbers can also be used instead of pickles for a refreshing twist.
Step 2
Finely mince the onion; this will add a wonderful sweetness to your patties. The finer you mince it, the softer and more integrated it will be in the patty.
Step 3
Wash the fresh baby greens thoroughly under running water. Drain them well in a colander; excess water can make your burger soggy.
Step 4
In a large skillet or wok, melt 1 tablespoon of butter over medium heat. Add the minced onion and sauté until it becomes golden brown and soft. To speed up the process and ensure even browning, stir the onions only every 30 seconds rather than constantly. This step builds a delicious sweet flavor base for your patties.
Step 5
If you like a bit of heat, finely chop 1 cheongyang pepper. For milder burgers, especially for children, feel free to omit the chili pepper or use a very small amount. Also, have your minced garlic ready.
Step 6
For the best texture and flavor, it’s ideal to mix ground beef and ground pork in roughly equal proportions, or a ratio like 100g beef to 200g pork, as indicated. This combination yields a richer, more satisfying patty.
Step 7
In a large mixing bowl, combine the ground beef, ground pork, the sautéed onions, 1 egg, 3 tablespoons of milk, 1 tablespoon of soy sauce, 0.5 teaspoon of salt, 1 tablespoon of sugar, 1 tablespoon of minced garlic, 1 tablespoon of chopped cheongyang pepper, a pinch of black pepper, and 2 tablespoons of cooking wine. Mix everything thoroughly, kneading the mixture until it becomes cohesive and slightly sticky. If the mixture feels too wet, gradually add about 5 tablespoons of breadcrumbs to reach a good patty consistency. Using breadcrumbs helps to keep the patties tender. This same mixture can also be used to make hambagu steaks.
Step 8
Shape the meat mixture into round, flat patties that are approximately the size of your morning rolls. Aim for a thickness of about 1 cm, which ensures they cook evenly through the center.
Step 9
If you have leftover patty mixture, you can place parchment paper between layers and store them in an airtight container in the freezer. This makes it convenient to have homemade patties ready for another meal. Frozen patties can be stored for up to a month.
Step 10
Heat 3 tablespoons of cooking oil in a non-stick skillet over very low heat. Carefully place the formed patties in the skillet. Cover with a lid and cook for about 1 minute. Flip the patties and cook the other side until golden brown. Cover again and continue to cook until the patties are thoroughly cooked through. Since they contain pork, ensuring they are fully cooked is crucial. Because they can burn easily, cooking them over low heat is key.
Step 11
Now, let’s prepare the special scallion cream cheese sauce. Finely chop the scallions. Using both the white and light green parts of the scallions will add the best flavor.

In a small bowl, combine 2 tablespoons of cream cheese, 2 tablespoons of chopped scallions, 1 tablespoon of honey, 0.5 teaspoon of dried basil (or parsley), and 1 tablespoon of lemon juice. Stir well until all ingredients are thoroughly mixed. This creates a delicious and flavorful scallion cream cheese sauce. The basil adds a lovely aromatic note, but parsley works beautifully too.

Slice the fresh tomato and pickles into rounds about 0.5 cm thick.

Slice the morning rolls in half horizontally. Spread the cheddar cheese slices on the bottom half of each roll. Then, layer with baby greens, tomato slices, the cooked patty, and a generous dollop of the scallion cream cheese sauce. Cutting the cheddar cheese to fit the shape of the morning roll makes for a neater presentation.

Finally, place the sliced pickles on top and cover with the top half of the morning roll to complete your mini hamburgers!
