Main Ingredients- 1 bunch Enoki mushrooms
- A little bit of green chili pepper (adjust to your taste)
- 1-2 Eggs
- 4 Tbsp Potato starch (or tempura powder)
- 7-8 Shrimp (peeled and deveined)
- Pinch of salt
Cooking Instructions
Step 1
First, trim the root of the enoki mushrooms, wash them thoroughly, and chop them into approximately 1cm lengths. Finely chop the green chili pepper. In a large bowl, combine the chopped enoki mushrooms, minced green chili pepper, eggs, potato starch, and salt. Mix well with chopsticks or a spatula to create the pancake batter. Ensure all ingredients are thoroughly blended.
Step 2
* Potato starch acts as a binder, helping the enoki mushrooms clump together nicely. If the batter seems too thin, you can add a little more potato starch.
Step 3
Prepare the shrimp by ensuring they are cleanly peeled and deveined. Lightly sauté them in a pan with a little oil over medium-low heat until they are just about cooked through. Avoid overcooking, as this can make the shrimp tough once the pancake is fried.
Step 4
Now it’s time to cook the pancake. Heat a generous amount of cooking oil in a pan over medium-low heat. Spoon portions of the enoki mushroom batter into the pan, shaping them into round pancakes. Arrange the prepared shrimp on top of the batter. Once the bottom is golden brown and cooked, flip the pancake and fry the other side until both sides are golden and crispy. Adjust the heat as needed to prevent burning.

Arrange the beautifully cooked enoki mushroom and shrimp pancakes on a plate. For an extra touch of flavor, serve with a simple dipping sauce made from soy sauce and a splash of vinegar, according to your preference.
