This was a popular menu item at the snack bars I often visited during my school days. It was so delicious that I became addicted to curry noodles! I still make it occasionally these days.

Ingredients

  • 1 packet of curry powder or solid curry roux (choose your preferred spice level)
  • 1 serving of noodles (use somen, chukumen, or your favorite type)
  • 1 purple sweet potato (adds sweetness and a beautiful color)
  • 50g carrot (for a crisp texture and vibrant color)
  • 100g onion (enhances sweetness and flavor)
  • 200g ground pork (adds a savory depth)

Cooking Instructions

Step 1

First, wash the purple sweet potato thoroughly and cut it into bite-sized cubes, about 1cm in size. The sweet potato will add a soft texture as it cooks.

Peel the onion and dice it into small pieces, similar in size to the sweet potato cubes (about 1cm). The onion’s sweetness will deepen the flavor of the curry.

Peel the carrot and also dice it into small cubes, about 0.7cm. As the carrot cooks, it adds sweetness and color, making the dish more appealing.

Heat a pan with a little oil and add the ground pork. Stir-fry until the pork is browned and releases a savory aroma. Cooking it well brings out its rich flavor.

Once the pork is partially cooked, add the diced onion, carrot, and purple sweet potato. Stir-fry together for about 3-5 minutes over medium heat until the vegetables soften and become slightly translucent. This process brings out their natural sweetness.

After stir-frying the vegetables, pour water into the pot and bring it to a boil. Adjust the amount of water based on your desired curry consistency and the amount of noodles. (Typically, 500-600ml of water is recommended per packet of curry).

Once the water is boiling, add the curry powder or roux. Stir well to prevent lumps. Cook over low heat, stirring continuously to prevent sticking to the bottom. Once it thickens to your desired consistency, turn off the heat.

In boiling water, cook the noodles according to the package instructions (usually 3-5 minutes). Drain the cooked noodles and rinse them under cold water. Place the noodles in a bowl, pour a generous amount of the hot curry over them, and enjoy! You can also serve with kimchi or pickled radish for extra flavor.
