Main Ingredients

  • 300g cooked rice (warm)
  • 8 strips bacon
  • 10cm white part of green onion
  • 1/4 onion
  • 35g oyster mushrooms
  • 1/6 carrot

Cooking Instructions

Step 1

While the rice is cooking, let’s prepare the vegetables. Trim the tough base from the oyster mushrooms and finely mince them with a knife. Finely dice the carrot, green onion, and onion as well. Finely chopping the vegetables will help them blend well with the rice and provide a smoother texture.

Heat a frying pan over medium-high heat and add a little cooking oil. Add all the minced vegetables (oyster mushrooms, carrot, green onion, onion) and stir-fry over high heat. Cook until the onions become translucent and the carrots are tender. Stir-frying over high heat helps to evaporate excess moisture and enhance the flavors.

Once the vegetables are well stir-fried, add 0.3 Tbsp of soy sauce and a pinch of black pepper for added flavor. Stir continuously for about 1 minute to ensure even cooking and prevent the soy sauce from burning. Let the cooked vegetables cool slightly before mixing them with the rice.

In a large bowl, combine the 300g of warm cooked rice with the stir-fried vegetables. Season with a pinch of salt or seasoned salt to taste. Add 1 Tbsp of sesame oil and 1 Tbsp of toasted sesame seeds for a nutty aroma. Use a spatula held vertically to gently mix the rice and vegetables, being careful not to mash the rice grains. Taste and adjust the seasoning with more salt if needed.

Put on disposable gloves and mix the rice thoroughly. Take portions of the rice mixture and shape them into oblong oval forms, about the size of a small baseball. Continue shaping the rest of the rice mixture into similar-sized rice balls. This shape will make it easier to wrap with bacon.

Lay one strip of bacon flat on a cutting board. Place a prepared rice ball at one end of the bacon strip. Carefully roll the bacon around the rice ball, ensuring it is completely covered. I made 8 rice balls using 8 strips of bacon.

Heat a frying pan over medium-low heat. Place the bacon-wrapped rice balls seam-side down in the hot pan. This will help the bacon seal and prevent it from unraveling as it cooks.

Cook the seam side first until it’s lightly browned. Then, using chopsticks, gently roll the rice balls to ensure all sides of the bacon are evenly cooked and become crispy. Cook over low heat until the bacon is golden brown and crisp all around. Your delicious bacon-wrapped rice balls are ready to be enjoyed!
