Main Ingredients- 1 whole squid, cleaned
- 100g bean sprouts
- 1/3 carrot
- 1/2 onion
- 1/2 green onion (scallion)
- 2 chili peppers (adjust to your spice preference)
- 100g baby arugula
Stir-fry Sauce- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp soy sauce
- 2 Tbsp gochugaru (Korean chili flakes)
- 0.5 Tbsp minced garlic
- 1 Tbsp plum extract (maesilcheong)
- 1 Tbsp oligosaccharide
- 0.5 Tbsp cooking sake (cheongju) or ginger wine
- A little sesame oil
- A little sesame seeds
- A little cooking oil
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp soy sauce
- 2 Tbsp gochugaru (Korean chili flakes)
- 0.5 Tbsp minced garlic
- 1 Tbsp plum extract (maesilcheong)
- 1 Tbsp oligosaccharide
- 0.5 Tbsp cooking sake (cheongju) or ginger wine
- A little sesame oil
- A little sesame seeds
- A little cooking oil
Cooking Instructions
Step 1
First, prepare all the fresh ingredients for your squid rice bowl. Wash all the vegetables thoroughly.
Step 2
On the inside of the squid (the side without skin), make diagonal cuts. This helps the sauce penetrate better. Then, slice the squid into bite-sized pieces, about 2cm wide.
Step 3
Finely chop the green onion. Thinly slice the chili peppers diagonally for a bit of heat. Coarsely shred the onion, similar in size to the squid pieces. Slice the carrot into thin, bite-sized pieces as well.
Step 4
Let’s make the flavorful stir-fry sauce! In a bowl, combine the gochujang, soy sauce, gochugaru, minced garlic, plum extract, oligosaccharide, and cooking sake. Mix well until there are no lumps to create a smooth sauce.
Step 5
Now, for the quick stir-fry! Heat a wok or a heavy-bottomed pan over high heat. Add a generous amount of cooking oil, then add the chopped green onions and stir-fry briefly until fragrant. Next, add the chili peppers, carrots, and onions, and stir-fry. Once the vegetables start to soften, add the squid. When the squid begins to turn opaque, pour in all the prepared stir-fry sauce and stir-fry quickly.
Step 6
Finally, add the bean sprouts for a refreshing crunch. Stir-fry everything together over high heat for about 1 minute, just until the bean sprouts are slightly tender but still crisp. Be careful not to overcook, or the bean sprouts will become soggy! This completes your spicy and sweet stir-fried squid.
